  • 2 to 2.5 lbs russet or Yukon Gold potatoes
  • water for boiling
  • 1 tsp salt
  • 1/2 tsp baking soda
  • 1/2 to 3/4 cup avocado oil
  • 1 tbsp fresh minced rosemary
  • 1 lemon, zested
  • 2 tbsp smoked, kosher, or sea salt
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 cup avocado or regular mayonnaise
  • 1 large garlic clove, pressed
  • 1 tbsp fresh minced chives
  • 1 tsp fresh minced rosemary
  • 1 tsp lemon juice
  • 1/2 tsp kosher salt

Instructions

  1. Parboil the Potatoes: Bring a large pot of water to a boil, adding salt and baking soda. Add the peeled and quartered potatoes, and parboil for 10 minutes until slightly tender but not falling apart.
  2. Preheat Oven and Prepare Baking Sheets: Preheat the oven to 425°F (220°C) and line 1 or 2 baking sheets with parchment paper depending on quantity.
  3. Toss Potatoes with Seasonings: Drain the potatoes and transfer them to a large bowl. Add salt, pepper, onion powder, olive oil, garlic, and vegan butter. Stir gently to coat evenly while preserving texture.
  4. Arrange Potatoes on Baking Sheet: Place potatoes cut-side down on the baking sheet with space between pieces to allow crispiness. You may need two sheets for even roasting.
  5. First Oven Roast: Bake for 30 minutes until the bottoms start to crisp and turn golden.
  6. Flip and Add Fresh Thyme: Remove potatoes from oven, flip each piece, and evenly sprinkle smashed fresh thyme over them.

  9. Variation: Prepare Potatoes and Oil for Roasting: Peel and chop potatoes as desired. Parboil in salted water with baking soda for 8-10 minutes until fork tender. Drain and shake in pot to fluff.
  10. Preheat Oven and Oil: Preheat oven to 425°F. Pour avocado oil into roasting pan and warm it in oven for 10 minutes.
  11. Roast Potatoes in Hot Oil: Add potatoes to hot oil, toss gently to coat, arrange in a single layer, and roast for 60-70 minutes, turning every 20 minutes until golden and crispy all around.
  12. Make Seasoned Salt: Mix fresh rosemary, lemon zest, smoked/kosher/sea salt, oregano, garlic powder, and onion powder.
  13. Make Avocado Mayo Dip: Combine avocado mayo, pressed garlic, chives, fresh rosemary, lemon juice, and kosher salt.
  14. Finish and Serve: Toss cooked potatoes with seasoned salt and serve alongside the avocado mayo dip.
