Ingredients
Potato Nests
- 4 large Russet potatoes, peeled and chopped
- 1 egg, beaten
- ½ cup shredded cheddar or mozzarella cheese (optional)
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons flour or breadcrumbs
- Baking spray or oil for muffin tin/frying
Fillings
- 1 cup cooked ground turkey, seasoned
- 3 scrambled eggs
- 1 cup sautéed spinach & mushrooms with garlic
- ½ cup shredded cheddar cheese
- ¼ cup sour cream (optional)
- 2 tablespoons chopped chives
Instructions
- Boil Potatoes: Peel, chop, and boil the potatoes in salted water until they are fork-tender, about 15–20 minutes. Drain thoroughly and mash while still warm to ensure smoothness.
- Prepare Potato Mixture: Mix in the beaten egg, salt, pepper, optional cheese, and flour or breadcrumbs into the mashed potatoes. Stir until the mixture holds together well for shaping.
- Form Nests: Spoon the potato mixture into a greased muffin tin, pressing the mixture up the sides of each cup to form nest shapes that can hold the filling later.
- Cook Nests: Bake the nests at 400°F (200°C) for 20–25 minutes until they turn golden and crispy. Alternatively, fry the formed nests in a skillet with oil until crisp and golden.
- Add Fillings: Fill each nest with cooked ground turkey, scrambled eggs, sautéed spinach and mushrooms, or your preferred toppings. Sprinkle with shredded cheese, chives, or a dollop of sour cream, and serve warm.
Notes
- These nests do not need to be perfect; even nests with cracked edges deliver great comforting flavor.
- Try different filling variations such as bacon and cheese, chicken and veggies, or a brunch version with eggs and sausage to suit your taste.
- The recipe is versatile, allowing flexibility in fillings and cheeses to accommodate preferences and dietary needs.
