Chicken and Seasonings
- 3.5 pounds boneless skinless chicken breasts (about 5 breasts)
- 2 teaspoons onion powder
- 2 teaspoons garlic powder
- 2 teaspoons lemon pepper
- 1 teaspoon salt
Sauce and Flavorings
- 2 Tablespoons unsalted butter
- 2 teaspoons minced garlic
- 1 1/4 cups chicken broth
- 2 Tablespoons lemon juice
- 2 teaspoons Italian seasoning
- 1/2 cup sliced onion
- 1 Tablespoon lemon zest
- 1 large lemon (sliced into rings)
- 2 Tablespoons capers
Instructions
- Trim chicken: Remove any excess fat from the chicken breasts to ensure even cooking and a cleaner flavor.
- Season chicken: In a mixing bowl, combine onion powder, garlic powder, lemon pepper, and salt. Generously season both sides of the chicken breasts with part of this mixture. Keep the remaining seasoning aside for later use.
- Brown chicken: Melt the unsalted butter in a skillet over medium-high heat. Add the seasoned chicken breasts and brown them on both sides, about 5 minutes total. This step adds flavor and texture before slow cooking.
- Transfer chicken to crockpot: Remove the browned chicken breasts from the skillet and place them into the crockpot, arranging evenly.
- Sauté garlic: To the skillet with leftover butter and brown bits, add minced garlic and sauté for 10 to 15 seconds until fragrant, being careful not to burn the garlic.
- Prepare sauce: Add chicken broth, lemon juice, the remaining seasoning mixture, and Italian seasoning to the skillet. Whisk or stir well to combine, heating through and mixing all flavors.
- Layer crockpot: Pour half of the skillet sauce over the chicken in the crockpot. Then add sliced onions, lemon zest, and lemon rings on top. Pour the remaining skillet sauce over the layered ingredients.
- Cook chicken: Cover and cook on high for 3 to 4 hours or on low for 6 to 7 hours until the chicken is cooked through and tender.
- Add capers and finish: Remove the crockpot lid and stir in capers. Replace the lid and turn off the heat. Let the chicken sit for 5 minutes to warm the capers and allow flavors to meld before serving.
Notes
- For a richer flavor, you can use chicken thighs instead of breasts.
- Adjust lemon juice and zest according to your taste preference for more or less tang.
- Serve with rice, mashed potatoes, or steamed vegetables to complement the dish.
- Leftovers can be refrigerated for up to 3 days or frozen for longer storage.
