Egg Mixture
- 5 eggs
- 1 cup whole milk

Instructions
- Preheat the oven and prepare the pan: Preheat your oven to 375°F (190°C). Lightly brush a 9-inch pie plate with olive oil to prevent sticking, and place it onto a baking sheet to catch any spills during baking.
- Whisk the eggs and cube the cheese: In a large mixing bowl, vigorously whisk together the 5 eggs and 1 cup of whole milk until well combined. Cube the 4 ounces of Fontina or mozzarella cheese and set aside for later layering.
- Prepare the vegetables: Heat a large skillet over medium-high heat and add 1 tablespoon of olive oil. Once heated and shimmering, add the sliced mushrooms, minced yellow onion, and minced garlic. Sprinkle the mixture with 1 teaspoon dried thyme, 1 teaspoon kosher salt, and 1/2 teaspoon black pepper. Cook, stirring occasionally, until mushrooms shrink and onions become translucent, about 10 to 15 minutes depending on mushroom size. Pour 1 1/2 tablespoons of balsamic vinegar over the vegetables and stir for an additional 1-2 minutes. Add the 2 cups of packed baby spinach leaves and cook, stirring until the spinach wilts, about 3 minutes. Taste and adjust seasoning if needed.
- Combine ingredients in the pie plate: Transfer the cooked vegetable mixture into the prepared pie plate, spreading evenly. Sprinkle the cubed cheese over the top, then carefully pour the egg and milk mixture over all ingredients until it reaches the rim of the plate.
- Bake: Place the baking sheet with the pie plate into the preheated oven and bake for 35 minutes, or until the center of the quiche is set and a knife inserted comes out clean. Remove from oven and allow to cool at room temperature for about 10 minutes before serving to let it firm up slightly and enhance the flavors.
