Ingredients
Chocolate Mousse
- 3 eggs (~55g/2 oz each), separated
- 125g / 4.5 oz dark cooking chocolate (bittersweet / 70% cocoa)
- 10g / 0.3 oz unsalted butter
- 1/2 cup full fat cream
- 3 tbsp caster sugar (superfine white sugar)
For Garnish
- More whipped cream
- Chocolate shavings
- Optional: Raspberries and tiny sprigs of mint
Instructions
- Work Steadily: Maintain a steady pace throughout the preparation to prevent the whipped egg whites and cream from warming, which could affect their texture.
- Separate Eggs: While eggs are cold, separate the yolks and whites into two different bowls: large bowl for whites, small bowl for yolks. Leave whites aside while preparing other ingredients.
- Whisk Yolks: Whisk the yolks until they become uniform and slightly thickened.
- Melt Chocolate and Butter: Break the chocolate into pieces and place in a microwave-safe bowl with butter. Microwave in 30-second bursts, stirring in between until smooth. Allow to cool slightly.
- Whip Cream: Beat the full fat cream until stiff peaks form. Be cautious not to overwhip to avoid turning it into butter.
- Whip Egg Whites: Add caster sugar to the egg whites, then beat until firm peaks form for maximum volume and stability.
- Fold Yolks into Cream: Gently fold the egg yolks into the whipped cream using a rubber spatula, limiting to a maximum of 8 folds to retain airiness. Streaks are acceptable.
- Check Chocolate Temperature: Ensure the melted chocolate is warm but still runny, ideally around 40°C (104°F). If too thick or cool, warm in 5-second microwave bursts until fluid.
- Incorporate Chocolate: Pour the warm chocolate into the cream and yolk mixture. Fold gently with no more than 8 folds to blend without losing volume.
- Mix in Egg Whites in Two Steps: Add one-quarter of the whipped egg whites to the chocolate mixture and fold about 10 times until incorporated. Then fold the chocolate mixture into the remaining egg whites using up to 12 folds until smooth and no white streaks remain.
- Divide and Chill: Spoon the mousse evenly into 4 small glasses or serving pots. Refrigerate for a minimum of 6 hours, preferably overnight for best texture and flavor development.
- Serve and Garnish: Before serving, garnish with additional whipped cream and chocolate shavings. Fresh raspberries and a mint sprig can be added for color and freshness.
Notes
- Use high-quality dark chocolate (70% cocoa) for rich flavor.
- Butter helps smooth the chocolate and adds silkiness.
- Beating egg whites and cream at a cool temperature ensures stable peaks.
- Folding gently preserves the mousse’s light texture.
- Do not overwhip cream or egg whites to prevent graininess.
- Flavorings such as vanilla or liqueur can be added when melting chocolate but check recipes for compatibility.
