Ingredients
For the Mousse:
- 450 ml double cream
- 6 large egg whites
- 1/2 teaspoon cream of tartar
- 80 g granulated sugar
- 300 g milk chocolate
- 300 g dark chocolate
- 6 large egg yolks
- 2 teaspoons vanilla extract
- 1/4 teaspoon salt
For the Ganache:
- 100 g dark chocolate
- 150 ml double cream
Instructions
- Whip the Cream: In a large bowl, whisk the double cream at high speed until soft peaks form. Set aside.
- Prepare Egg Whites: In another large bowl, whip the egg whites with cream of tartar until foamy. Gradually add granulated sugar while continuing to whip until stiff peaks form. Set aside.
- Melt Chocolates: In a heatproof bowl, combine milk and dark chocolates. Melt over simmering water or in short bursts in the microwave, stirring until smooth.
- Combine Ingredients: Add a large dollop of whipped cream to the melted chocolate along with egg yolks, vanilla extract, and salt. Whisk vigorously until the mix thickens and may become lumpy.
- Fold Cream and Egg Whites: Gradually whisk in the remaining whipped cream. Gently fold in half of the whipped egg whites, then fold in the remaining half carefully to preserve the airiness.
- Chill the Mousse: Transfer the mousse to a serving dish (about 8 inches or any size). Refrigerate overnight to let it set perfectly.
- Prepare Ganache: The next day, place dark chocolate and double cream in a bowl. Heat in microwave in 30-second intervals, stirring in between, until the chocolate is fully melted and smooth.
- Top and Set: Pour the ganache over the chilled mousse and spread evenly. Return to the fridge for 10-20 minutes to allow the ganache to set.
- Serve: Once set, the chocolate mousse is ready to be served and enjoyed.
Notes
- Ensure egg whites are whipped to stiff peaks for a light and airy mousse.
- Gently fold the egg whites into the mousse mixture to avoid deflating it.
- Melt chocolate slowly to avoid burning or seizing.
- Using a mix of milk and dark chocolate balances sweetness and depth of flavor.
- Refrigerate mousse overnight for the best texture and flavor development.
- If you prefer, you can use a double boiler instead of a microwave for melting chocolates.
