- 1/4 cup chia seeds
- 2 1/2 tbsp cocoa powder
- 1/4 tsp salt
- 1/3 cup dark chocolate chips
Wet Ingredients
- 1 cup peanut butter or pumpkin seed butter (for school-friendly option)
- 2 1/2 tbsp honey
- 1 tbsp coconut oil
- 1 tsp vanilla extract
Instructions
- Combine Ingredients: Add all ingredients except the chocolate chips into a food processor and process until the mixture is well-blended and forms a sticky dough.
- Add Chocolate Chips: Transfer the processed mixture into a medium-sized bowl and stir in the dark chocolate chips evenly throughout the dough.
- Form Balls: Roll the mixture into 1-inch balls using your hands and place them on parchment paper inside an airtight container or on a baking sheet for freezing.
- Chill and Serve: Chill the energy bites in the refrigerator or freezer until firm. They can be stored in an airtight container or freezer-safe bag for easy grab-and-go snacking.
Notes
- For longer storage, roll the bites and freeze them on a baking sheet before transferring to a freezer-safe bag.
- Using pumpkin seed butter makes the recipe school-safe by avoiding nut allergens.
- You can substitute honey with maple syrup for a vegan option.
- Adjust cocoa powder amount for preferred chocolate intensity.
- Quick-cooking steel-cut oats provide a softer texture; rolled oats can be used for a chewier bite.
