This Dump-and-Bake Chicken Broccoli Rice Casserole is a simple, comforting one-dish meal that combines tender chicken, nutritious broccoli, and fluffy rice in a creamy sauce. Perfect for busy weeknights, this recipe requires minimal prep and bakes all ingredients together in one pan, delivering a hearty, cheesy casserole with delightful flavors and textures.

  • Total Time: 1 hour 10 minutes
  • Yield: 6 servings

Ingredients

Main Ingredients

  • 1 (10.5 oz) can condensed cream of chicken soup
  • 2 cups chicken broth, water, or milk
  • 1 cup uncooked long grain white rice
  • 1 lb. uncooked boneless, skinless chicken breasts or boneless, skinless chicken thighs, diced
  • 1 (12.6 oz) bag frozen baby broccoli florets (or cuts)
  • 1 cup grated sharp cheddar cheese
  • Kosher salt and ground black pepper, to taste

Optional Seasonings and Garnish

  • Garlic powder (about ¼ teaspoon)
  • Onion powder (about ¼ teaspoon)
  • Other herbs optionally: paprika, thyme, rosemary, basil, oregano, chives, parsley, or seasoned salt
  • Chopped fresh herbs such as parsley or thyme for garnish

Instructions

  1. Preheat Oven and Prepare Dish: Preheat the oven to 375°F (190°C). Lightly spray a 9 x 13-inch baking dish with nonstick cooking spray to prevent sticking.
  2. Mix Base Sauce: In the prepared baking dish, whisk together the condensed cream of chicken soup and the 2 cups of chicken broth, water, or milk until smooth and well combined.
  3. Add Ingredients to Dish: Stir in the uncooked long grain white rice, diced uncooked chicken, and frozen broccoli florets. Season the mixture with about ½ teaspoon kosher salt and ¼ teaspoon ground black pepper. Add optional herbs and spices like garlic powder, onion powder, parsley, thyme, basil, oregano, or chives, and stir again to combine thoroughly.
  4. Cover and Bake: Cover the dish tightly with foil to trap steam and moisture. Bake in the preheated oven for 55 to 60 minutes, checking towards the end. The casserole is done when most of the liquid is absorbed, the rice is tender, and the chicken is fully cooked through (no pink remaining).
  5. Check and Extend Baking If Needed: If the rice is still too firm after 1 hour, keep the dish covered and return it to the oven for an additional 5 to 10 minutes. Avoid overcooking to prevent mushy rice.
  6. Add Cheese and Melt: Remove the foil and sprinkle the grated sharp cheddar cheese evenly on top. Return the casserole to the oven uncovered for a few minutes until the cheese is melted and bubbly.
  7. Garnish and Serve: Optionally garnish with chopped fresh herbs such as parsley or thyme for added freshness and color. Serve the casserole hot and enjoy immediately.

Notes

  • Cooking time may vary based on your oven and type of baking dish; glass or ceramic pans may require longer cooking than metal pans.
  • Use only long grain white rice to achieve correct texture; other rice types may result in different doneness or consistency.
  • Adjust seasoning and herbs to taste to customize the flavor.
