  • 1 teaspoon kosher salt
  • 1/4 cup lemon juice

Instructions

  1. Prepare Garlic and Base: Peel the garlic cloves thoroughly and place them into a wide-mouth quart jar or a container of similar size. Add the kosher salt and lemon juice to the jar to create the base mixture.
  2. Blend to Paste: Using an immersion blender, blend the garlic, salt, and lemon juice until the mixture becomes a smooth, thick paste, ensuring the garlic is finely processed.
  3. Add Oil and Emulsify: Pour all the oil on top of the garlic paste mixture. Immerse the blender all the way to the bottom of the jar without raising it. Begin blending and as the mixture emulsifies and thickens, slowly lift the blender upward gradually, continuing to blend until the entire mixture turns white, creamy, and fluffy.
