Ingredients

Cheese Layer

  • 2 packages (5.3 oz each) Boursin cheese (any flavor or dairy-free version)

Bruschetta Topping

  • 1 1/2 cups chopped de-seeded vine-ripened or Roma tomatoes
  • 1/4 cup packed fresh basil leaves, chopped, plus extra for garnish
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 clove garlic, pressed or very finely minced
  • Salt and pepper, to taste

To Serve

  • Balsamic reduction (Alessi brand recommended)
  • Crackers or crostini (see notes for crostini recipe)

Instructions

  1. Soften the Boursin: Let the two packages of Boursin cheese sit at room temperature for 15-20 minutes to soften slightly, making it easier to spread evenly.
  2. Prepare the bruschetta mixture: In a small bowl, combine the chopped tomatoes, chopped basil, olive oil, balsamic vinegar, garlic, salt, and pepper. Stir well and let sit for 5 minutes so the salt draws out the tomato juices.
  3. Spread the cheese: Transfer the softened Boursin cheese to an 8-9 inch shallow serving dish or pie pan. Use the back of a spoon to spread it out into an even layer.
  4. Add the tomato topping: Spoon the bruschetta mixture over the cheese layer, leaving any accumulated liquid in the bowl. (Reserve the juices to drizzle over a salad if desired.)
  5. Finish with balsamic reduction and garnish: Drizzle the balsamic reduction over the top of the dip and garnish with additional fresh basil leaves.
  6. Serve: Serve immediately with crackers or homemade crostini and a spreading knife.

Notes

  • You can use any flavor of Boursin cheese, including dairy-free options.
  • To make ahead: Spread the Boursin in the serving dish and prepare the bruschetta topping up to 24 hours ahead. Store them separately covered in the refrigerator and combine just before serving.
  • To make crostini: Slice a gluten-free or regular baguette into 1/4-inch slices. Arrange on a parchment-lined baking sheet, brush both sides with olive oil, season lightly with salt and pepper, then bake at 350°F (175°C) for 8-12 minutes, flipping halfway, until golden and crisp.
