Ingredients
Dry Ingredients
- 1 ½ cups all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
Wet Ingredients
- ½ cup unsalted butter, melted and cooled
- ¼ cup granulated sugar
- ¼ cup light or dark brown sugar, packed
- 1 teaspoon vanilla extract
- 1 egg
For Rolling and Decorating
- 4 tablespoons granulated sugar for rolling
- Sprinkles for rolling
- 1 tablespoon milk or dark chocolate
- 3 tablespoons white chocolate
- Pink/red oil-based food coloring
Instructions
- Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt until well combined to ensure even distribution of leavening agents and salt.
- Mix Butter and Sugars: In a large bowl, use a silicone spatula to mix the melted and cooled butter with granulated sugar and brown sugar until the mixture is smooth and combined.
- Add Egg and Vanilla: Incorporate the egg and vanilla extract into the butter-sugar mixture, stirring until you achieve a smooth batter.
- Combine Wet and Dry Ingredients: Gradually add the dry ingredients into the wet mixture, mixing thoroughly until no dry spots remain. For softer cookies, proceed immediately; for chewier cookies, cover the dough with plastic wrap and refrigerate for 30 minutes before continuing.
- Preheat Oven and Prepare Baking Sheets: Preheat your oven to 325°F (163°C). Line two baking trays with parchment paper or silicone mats to prevent sticking and facilitate easy cleanup.
- Set Up Rolling Ingredients: Place 4 tablespoons of granulated sugar in a small bowl or plate for rolling the dough. Set up a separate plate with sprinkles for decorating some cookies.
- Scoop and Roll Regular Sugar Cookies: Using a small cookie scoop (about 1 ½ tablespoons), scoop dough balls, roll each in granulated sugar, and place them spaced 3-4 inches apart on the prepared baking trays.
- Scoop and Roll Sprinkle Sugar Cookies: Using the same scoop size, roll cookie dough balls in sprinkles instead of granulated sugar, and place them similarly on the trays.
- Scoop and Shape Bunny Sugar Cookies: Scoop dough balls for the bunnies as before, roll in granulated sugar, and place on the trays as the bunny heads. For ears, take approximately ¾ teaspoon of dough, shape it into a ball, split into two equal parts, roll each into 1.25-inch logs, and position them on top of the bunny heads spaced apart so they don’t connect during baking. Space bunnies 3-4 inches apart.
- Bake Cookies: Bake cookies for 9-11 minutes. For soft cookies, bake until edges are firm but centers remain tender. For chewier cookies, bake a bit longer until edges show a light golden-brown color. Immediately after baking, gently press decorative carrot sprinkles into warm cookies if using. Alternatively, use melted chocolate to adhere decorations later.
- Cool Cookies: Let the cookies cool on the baking sheet for 5-10 minutes to firm up, then transfer to a wire rack to cool completely.
- Melt Dark Chocolate for Decoration: Melt 1 tablespoon of milk or dark chocolate in a microwave-safe bowl, heating in 30-second intervals and stirring between until smooth. Transfer chocolate to a piping bag to draw on the bunny eyes and nose.
- Melt White Chocolate and Add Coloring: Melt 3 tablespoons of white chocolate in a separate bowl, adding a drop of pink or red oil-based food coloring. If the chocolate seizes, stir in neutral oil (canola or vegetable) one teaspoon at a time to smooth it out. Transfer to a piping bag and use to create blush and ear details on the bunnies.
- Enjoy Your Bunny Sugar Cookies: Allow chocolate decorations to set before serving. These adorable cookies are perfect for celebrations or gifting.
Notes
- For softer cookies, skip refrigerating the dough and bake immediately.
- Refrigerate the dough for 30 minutes before baking to achieve chewier cookies.
- Use oil-based food coloring with white chocolate to avoid seizing. If seizing occurs, add neutral oil gradually to smooth.
- Decorate with piping bags, toothpicks, or cookie scribes depending on detail preference.
- Spacing cookies 3-4 inches apart prevents sticking during baking and ensures even heat distribution.
- Using parchment paper or silicone baking mats helps prevent cookies from sticking and promotes even baking.
