Ingredients
Cookie Ingredients
- 15.25 ounces confetti or white cake mix (1 box)
- 1/3 cup vegetable oil
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1 tsp cornstarch
- 2 large eggs
- 1 tsp red food coloring
Ice Cream and Decoration
- Vanilla ice cream (amount as needed, approx. 2-3 scoops per sandwich)
- Blue sprinkles (for coating the edges)
Instructions
- Mix Dry Ingredients: In a large bowl, combine the cake mix, baking powder, and cornstarch. Stir the dry ingredients together until well mixed and set aside.
- Combine Wet Ingredients: In a separate smaller bowl, whisk together the eggs, vegetable oil, and vanilla extract until fully combined.
- Form Cookie Dough: Pour the wet mixture into the dry ingredients and stir thoroughly until the dough is smooth and uniform.
- Add Coloring: Mix in 1 teaspoon of red food coloring to the dough until evenly distributed for a vibrant red hue.
- Shape Cookies: Drop spoonfuls of the cookie dough onto a baking sheet lined with parchment paper or a silicone mat, spacing them evenly to allow spreading.
- Bake Cookies: Bake the cookies in a preheated oven at 350°F (175°C) for 8 to 10 minutes, or until they are set but still soft. Remove from oven and cool on a wire rack.
- Cool Completely: Ensure the cookies are completely cool before assembling the ice cream sandwiches to prevent melting.
- Soften Ice Cream: Take the vanilla ice cream out of the freezer and let it sit for a few minutes to soften slightly for easier spreading.
- Assemble Sandwiches: Place 2-3 scoops of softened ice cream onto the flat side of one cookie and spread it evenly to cover the surface.
- Add Top Cookie: Place a second cookie, flat side down, on top of the ice cream, pressing gently to create a sandwich.
- Decorate Edges: Roll the ice cream edges of the sandwich in blue sprinkles or sprinkle them on by hand for a colorful finish.
- Freeze Sandwiches: Place the assembled ice cream sandwiches in the freezer until firm and ready to serve.
- Serve and Enjoy: Remove from the freezer a few minutes before serving to soften slightly and enjoy this fun, festive treat!
