Ingredients

For the Taco Filling

  • 1 pound Ground beef
  • 1 packet Taco seasoning
  • 1 cup Salsa
  • 4 oz Cream cheese

For the Topping

  • 1 can Corn (drained)
  • 1/2 cup Shredded cheese

For the Cornbread

  • 1 box Cornbread mix (8.5 oz)
  • 1 Egg
  • 1/3 cup Milk

Instructions

  1. Preheat the oven: Preheat your oven to 400 degrees Fahrenheit. Prepare a pie dish by spraying it with nonstick cooking spray and set it aside to ensure easy removal and cleanup.
  2. Cook the ground beef mixture: In a large skillet, cook the ground beef over medium heat until fully browned. Drain off any excess fat. Return the skillet to the stovetop. Add the taco seasoning packet, salsa, and cream cheese to the beef. Stir continuously and cook until the cream cheese is fully melted and the mixture is well combined, creating a creamy taco filling. Transfer this mixture into the prepared pie dish, spreading it evenly.
  3. Add corn and cheese topping: Drain the canned corn thoroughly and sprinkle it evenly over the beef mixture in the pie dish. Then evenly distribute the shredded cheese on top of the corn layer to add a savory, melty layer.
  4. Prepare and add the cornbread batter: Following the box instructions for the cornbread mix, combine the mix with 1 egg and 1/3 cup milk to create the batter. Spoon the cornbread batter evenly over the entire pie, covering the toppings completely.
