Instructions
- Heat the oil and sauté vegetables: Heat a large skillet over medium heat and add the extra-virgin olive oil. Add the chopped onion and sliced mushrooms, and sauté for 4-5 minutes until they soften and begin to brown. Add the minced garlic and cook for another 30 seconds to release its aroma.
- Prepare and season the chicken: While the vegetables cook, slice the boneless, skinless chicken breast into long strips about 1 inch wide. Season the chicken evenly with kosher salt and black pepper.
- Sear the chicken: Increase the heat to medium-high. Add the seasoned chicken strips to the skillet with the sautéed vegetables. Cook for 6-8 minutes, turning once halfway through, until the chicken strips develop a golden-brown crust and start to cook through.
- Create the creamy sauce: Reduce the heat to medium. Add the cream cheese and low-sodium chicken broth to the skillet. Stir continuously until the cream cheese melts completely and blends into a creamy sauce coating the chicken and vegetables.
- Add mozzarella and finish cooking: Sprinkle the shredded mozzarella cheese evenly over the entire pan. Cover the skillet and reduce the heat to low. Let it cook for 2-3 more minutes, or until the chicken is fully cooked and reaches an internal temperature of 165°F (74°C). Season with additional salt and pepper to taste.
- Serve: Spoon the creamy chicken and mushroom mixture over steamed brown or white rice. Garnish with chopped fresh parsley if desired, and serve warm for a comforting meal.

- If you prefer a thicker sauce, use the lesser amount of chicken broth or allow the sauce to reduce a bit more before adding cheese.
- Feel free to substitute mozzarella with other melting cheeses like provolone or Monterey Jack.
