  • 2 teaspoons active dry yeast
  • 325g all purpose flour (2 1/2 cups)
  • 40g sugar (3 tbsp)
  • 1 teaspoon salt
  • 60g unsalted butter, softened (1/4 cup)
  • 1 egg

Garlic Butter

  • 60g unsalted butter, melted (1/4 cup)
  • 1 tsp minced garlic, or 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1 tbsp freshly chopped parsley (or cilantro / chives)
  • 1 tsp honey (optional)

Instructions

  1. Activate Yeast: Warm the milk in the microwave for 20-30 seconds until it reaches about 110°F—warm but not hot. Stir in the active dry yeast and let rest for 10 minutes until the mixture becomes foamy, signaling that the yeast is activated.
  2. Prepare Dough: Add the flour, sugar, salt, softened butter, and egg to the yeast mixture in the stand mixer bowl. Knead on medium speed for 7-8 minutes until the dough is smooth, stretchy, and soft.
  3. First Rise: Transfer the dough to a clean oiled bowl, cover it with cling wrap, and place it in a warm spot to rise for 60-90 minutes until it doubles in size.
  4. Prep Baking Pan: Line a 9x9 inch baking pan with parchment paper to prepare for the dough knots.
  5. Shape Knots: Punch down the risen dough, divide into 9 equal pieces (~70g each), and roll each into a ball. Then, one piece at a time, roll into a 12-inch strip, loop one end through to make a knot, and tuck the other end in the opposite direction to form the classic knot shape.
  6. Second Rise: Arrange all the knots in the prepared pan, cover lightly, and let them rise again for 30-45 minutes.
  7. Prepare Garlic Butter: If using garlic powder, mix it with melted butter and salt. If using minced garlic, sauté the garlic in melted butter for 1-2 minutes until fragrant, then add salt.
  8. Preheat Oven: About 20 minutes before baking, preheat the oven to 350°F (175°C).
  9. Brush Before Baking: Once the knots have completed their second rise, generously brush them with half of the prepared garlic butter.
  10. Bake: Bake the garlic knots in the preheated oven for 20-22 minutes until golden brown.
  11. Mix Herbs and Honey: While baking, chop fresh parsley and mix it into the remaining garlic butter along with 1 teaspoon of honey, if using.
