Ingredients
Yogurt Sauce
- 1/2 cup Greek yogurt
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 1/4 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp sugar
- 1/4 tsp black pepper
Salad and Dressing
- 3 cups salad mix (lettuce, tomato, radish, red onion, grated carrot)
- 3 tbsp fresh mint, finely chopped
- 1 tbsp lemon juice (approx 1/2 lemon)
- 1.5 tbsp olive oil
- 1 tsp honey
- 1/4 tsp salt
Lamb Koftas
- 18 oz lamb mince
- 2.5 tbsp fresh parsley, finely chopped
- 2.5 tbsp fresh mint, finely chopped
- 3 cloves garlic, crushed
- 1/4 cup breadcrumbs
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp ground cinnamon
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp neutral oil (canola, groundnut or sunflower oil)
To Serve
- 4 wraps or flatbreads
- Pickled chilies
- Pickled red onion
- Sriracha sauce
Instructions
- Prepare the yogurt sauce: In a bowl, combine Greek yogurt, olive oil, lemon juice, garlic powder, salt, sugar, and black pepper. Mix well and set aside to let flavors meld.
- Mix the salad: In a large bowl, toss together the salad mix with the finely chopped fresh mint to infuse a refreshing herbal note.
- Make the dressing: In a small jug or bowl, whisk together lemon juice, olive oil, honey, and salt until emulsified. Set aside.
- Form the koftas: In a bowl, combine lamb mince, parsley, mint, crushed garlic, breadcrumbs, ground cumin, coriander, cinnamon, salt, and black pepper. Use your hands to mix until evenly combined, then shape into 16 small, even-sized koftas.
- Cook the koftas: Heat neutral oil in a large frying pan over medium-high heat. Once hot, add the koftas and fry for about 5 minutes, turning frequently until they are charred on all sides and cooked through.
- Warm the wraps: Heat the wraps according to the package instructions until soft and pliable.
- Toss the salad with dressing: Pour the prepared dressing over the salad mix and toss gently to evenly coat.
- Assemble and serve: Lay the warmed wraps on plates, add a few lamb koftas, spoon over the yogurt sauce, and top with the dressed salad. Add pickled chilies, pickled red onion, and a drizzle of sriracha sauce as desired. Roll up the wraps and enjoy immediately.
Notes
- Note 1: Neutral oil such as canola, groundnut, or sunflower oil is preferred for frying koftas as it has a high smoke point and neutral flavor.
- Note 2: Frying the koftas over medium-high heat allows them to develop a nice char on the outside while remaining juicy inside.
- Note 3: Ensure the pan and oil are hot before adding koftas to prevent sticking and achieve perfect browning.
