These Easy Lemon Salmon Kabobs are a quick and flavorful dish featuring wild sockeye salmon marinated in a zesty lemon and oregano blend, then air-fried to perfection. Tender, juicy salmon cubes are skewered with fresh lemon slices and cooked until they flake easily, making for a healthy and vibrant meal that's perfect for a weeknight or casual gathering.

  • Total Time: 22 minutes
  • Yield: 4 servings

Ingredients

Salmon and Marinade

  • 1 – 14-ounce wild sockeye salmon fillet, cut into 1 to 1½-inch cubes
  • 1 lemon, juiced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 3 cloves garlic, minced
  • ½ teaspoon salt
  • ⅛ teaspoon black pepper

For Kabobs

  • 4 lemons (use lemon slices from 3 lemons for the skewers)
  • Cilantro or parsley, for serving
  • Wooden skewers (soaked in water for 30 minutes prior to use)

Instructions

  1. Prepare Wooden Skewers: Soak wooden skewers in water for at least 30 minutes before beginning to prevent burning during air frying.
  2. Preheat Air Fryer: Set your air fryer to 400°F and let it preheat fully.
  3. Cut Salmon: Slice the wild sockeye salmon fillet into uniform cubes approximately 1 to 1½ inches in size to ensure even cooking.
  4. Make Marinade: In a small bowl, whisk together fresh lemon juice, olive oil, dried oregano, minced garlic, salt, and black pepper until well combined.
  5. Marinate Salmon: Toss the salmon cubes in the marinade to coat evenly. Optionally, refrigerate for up to 30 minutes to deepen the flavors.
  6. Assemble Kabobs: Thread the salmon cubes onto the soaked wooden skewers, alternating with lemon slices from 3 lemons.
  7. Brush Remaining Marinade: Brush the reserved marinade over the salmon skewers to keep them moist and flavorful.
  8. Cook in Air Fryer: Place the skewers in the preheated air fryer basket. Cook for 5 to 7 minutes, flipping halfway through, until salmon is cooked through, flakes easily, and reaches an internal temperature of 145°F.
  9. Garnish and Serve: Serve the hot kabobs garnished with fresh cilantro or parsley alongside any preferred sides.

Notes

  • Use fresh wild sockeye salmon fillet for the best flavor and texture.
  • Keep salmon cubes uniform in size to ensure even cooking on the skewers.
  • Soaking wooden skewers in water is essential to prevent them from burning in the air fryer.
  • If you don't have an air fryer, these kabobs can also be grilled or baked in the oven.
  • Customize the seasoning by adjusting the quantity of herbs and spices in the marinade to your taste.
