Ingredients
Cake
- ½ 9 inch cake (store bought or homemade, pound or sponge type cake)
Berry Sauce
- 2 cups berries (strawberries, blueberries, blackberries, raspberries, or a mixture)
- 1-2 tablespoons powdered sugar
Cheesecake Filling
- 1 cup heavy cream (whipping cream), at least 30% fat content
- 8 ounces cream cheese (whole fat), room temperature
- ¾ cup powdered/icing sugar
- ¾ teaspoon vanilla extract
Instructions
- Prepare Cake: Cut the 9 inch cake into bite-size pieces and set aside for layering.
- Make Berry Sauce: In a blender, combine 2 cups of your choice of berries and 1-2 tablespoons powdered sugar. Blend until smooth. Then, pass the mixture through a fine sieve to remove seeds and pulp, creating a smooth berry sauce. Set aside.
- Whip Cream: In a medium bowl, beat 1 cup of heavy cream using a mixer until stiff peaks form. This ensures a light, airy texture for the cheesecake filling.
- Prepare Cheesecake Filling: In another bowl, beat together 8 ounces of room temperature cream cheese, ¾ cup powdered sugar, and ¾ teaspoon vanilla extract until smooth and creamy. Gently fold the whipped cream into this cream cheese mixture until fully combined, maintaining the fluffiness.
- Assemble Parfaits: In glasses or mason jars, layer 3-4 pieces of cake first, drizzle with berry sauce, then spoon some cheesecake filling over. Repeat these layers once again to create two layers total.
- Chill: Refrigerate the assembled parfaits for at least 2 hours or overnight to let the flavors meld and the filling firm up.
- Serve: Just before serving, top each parfait with fresh fruit or extra berries. Enjoy the fresh, creamy, and fruity dessert!
Notes
- Mason jars, 8 oz glass cups, or parfait glasses work best for serving.
- Best eaten fresh or after chilling overnight; assembled parfaits can be stored in the refrigerator up to 3 days, though the cake may become soggy.
- If stored separately, cheesecake filling keeps 2-3 days refrigerated and berry sauce up to 5 days.
