Wet Ingredients
- 2 medium bananas (about 1–1/4 cups), very ripe
- 2 tsp (10g) pure vanilla extract
- 1/2 cup (120g) vegetable oil
- 1/3 cup (80g) milk
- 1 large egg

- 1/3 cup (66g) granulated sugar
- 1/3 cup (66g) light brown sugar, packed
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground cloves
- 1/2 tsp Kosher salt
- 1–1/2 tsp (9g) baking soda
- 1–3/4 cups (210g) all-purpose flour, spooned and leveled
Instructions
- Preheat the oven: Preheat your oven to 375°F (190°C). Line a 12-cup muffin pan with paper liners or lightly grease it with baking spray, then set it aside.
- Mash the bananas: In a large mixing bowl, mash the ripe bananas with the back of a large fork until mostly smooth with just a few small lumps remaining. Stir in the vanilla extract and vegetable oil until well combined.
- Add sugars and wet ingredients: Whisk in the granulated sugar, light brown sugar, milk, and egg until the mixture is smooth and incorporated.
- Mix the spices and leavening: Using a spatula, stir in the ground cinnamon, ground ginger, ground cloves, Kosher salt, and baking soda until evenly combined.
- Incorporate the flour: Gently fold in the all-purpose flour with a spatula, mixing just until no streaks of flour remain. Be careful not to overmix to keep the muffins tender.
- Fill muffin cups: Using a medium cookie scoop or large spoon, evenly distribute the batter into the prepared muffin cups, filling each mostly full.
- Bake the muffins: Bake in the preheated oven for 15-18 minutes, rotating the pan halfway through baking for even cooking. The muffins are done when tops are golden and domed, and a toothpick inserted into the center comes out mostly clean.
- Cool and serve: Remove the muffins from the oven and let them cool in the pan for about 10 minutes. Then carefully transfer them to a baking rack to cool completely or serve warm. Enjoy your delicious banana muffins!
