Ingredients
For the Peaches:
- 5 fresh peaches, sliced (about 4 cups)
- 1 cup granulated sugar
- 1 tablespoon lemon juice (about 1/2 of a lemon juiced)
For the Cobbler:
- 1/2 cup unsalted butter (1 stick)
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1 cup milk
- 1 tablespoon baking powder
- 1/4 teaspoon salt
Instructions
- Prepare the Peaches: Add sliced peaches, sugar, and lemon juice to a large saucepan or pot. Stir to combine all ingredients. Bring the mixture to a boil, then reduce heat and simmer for 5 to 10 minutes. Remove from heat and set aside.
- Melt the Butter: Preheat your oven to 375ºF (190ºC). Place the butter in a 9×9-inch to 9×13-inch glass baking dish and put the dish into the oven until the butter is completely melted.
- Mix the Batter: In a large mixing bowl, combine the flour, sugar, milk, baking powder, and salt. Stir the mixture thoroughly until smooth and well incorporated.
- Assemble the Cobbler: Remove the melted butter from the oven. Pour the batter evenly over the melted butter in the baking dish, but do not stir. Then, pour the peach mixture along with the juices evenly on top of the batter, again without stirring.
- Bake the Cobbler: Place the assembled cobbler in the oven and bake at 375ºF for 35 to 40 minutes, or until the cobbler is bubbly and golden brown on top. Remove from the oven and allow to cool slightly before serving.
- Serve: Serve warm, optionally with a scoop of vanilla ice cream for an extra indulgent treat.
Notes
- Use ripe but firm peaches for best texture and flavor.
- Lemon juice helps balance the sweetness and prevents the peaches from browning.
- Do not stir the batter after adding it to melted butter; this creates a layered cobbler effect.
- If fresh peaches are out of season, frozen peaches (thawed) can be substituted.
- For a dairy-free option, substitute milk with almond or oat milk and use vegan butter.
- Leftover cobbler can be refrigerated for up to 3 days and reheated before serving.
