Ingredients
Vegetables
- 1.5 pounds mini potatoes (a mix of red, purple, and yellow varieties)
- 3 medium-large bell peppers (red, orange, and/or yellow), cored and chopped into 1-inch pieces
- 1 medium onion (red or yellow), peeled and chopped into 1-inch pieces
Seasoning & Oil
- 3 tablespoons olive oil
- 1.5 teaspoons smoked paprika
- 1 teaspoon mild chili powder
- 1 teaspoon garlic powder
- Salt and pepper, to taste
Garnish
- A handful of fresh basil, chopped
Instructions
- Preheat Oven: Set your oven to 400°F (204°C) and line an extra large baking sheet with parchment paper to ensure easy cleanup and prevent sticking.
- Prepare Vegetables: Quarter the mini potatoes to ensure even roasting. Core and chop the bell peppers and onion into roughly 1-inch pieces for uniform cooking.
- Toss with Seasonings: Place the prepared potatoes, bell peppers, and onion onto the baking sheet. Drizzle with olive oil, then sprinkle the smoked paprika, chili powder, garlic powder, salt, and pepper. Toss thoroughly to coat all vegetables evenly.
- Arrange on Sheet Pan: Spread the seasoned vegetables into a single layer on the baking sheet. Avoid overcrowding to allow proper roasting and crisping.
- Roast: Bake in the preheated oven for approximately 45 minutes. Toss the vegetables halfway through the roasting time to ensure even cooking and browning.
- Check Doneness: The potatoes should be crisp on the outside yet tender inside, while the bell peppers should soften and caramelize slightly.
- Garnish and Serve: Remove from oven, sprinkle with freshly chopped basil, and serve hot as a delicious side dish or light main.
- Optional Adjustment: If your baking sheet isn’t large enough for a single layer, use two sheets or halve the recipe to prevent overcrowding and ensure even roasting.
Notes
- Using a single layer on the baking sheet is crucial for even roasting; avoid stacking the vegetables.
- You can use any color combination of bell peppers to add visual appeal and flavor variety.
- For a spicier version, swap mild chili powder for a spicier one, or add crushed red pepper flakes.
- Fresh basil adds a fragrant finish, but you can substitute with fresh parsley or oregano if preferred.
- Leftovers can be refrigerated in an airtight container for up to 3 days and reheated in the oven for best texture.
