Ingredients
Steak and Oil
- 2 Tbsp avocado oil
- 1 pound NY Strip Steak, cut into strips
Vegetables
- 1 small yellow onion, chopped
- 2 carrots, chopped
- 1 zucchini, chopped
- 1 red bell pepper, chopped
- 4 large cloves garlic, minced
- 1 Tbsp fresh ginger, peeled and grated
Curry Sauce
- 2 (15-oz) cans full-fat coconut milk
- 2 tsp fish sauce (optional)
- 4 Tbsp red curry paste
- 1 tsp sea salt (to taste)
Optional Garnish
- Thai basil leaves (optional)
Instructions
- Heat Oil and Sear Steak: Heat one tablespoon of avocado oil in a large nonstick skillet over high heat until sizzling hot. Add the steak strips in a single layer and brown them without stirring for a few minutes. Stir and continue browning until golden brown on the outside but not cooked through. Transfer steak to a plate and set aside.
- Sauté Onions: If needed, wipe out the skillet and add the remaining tablespoon of avocado oil. Heat over medium-high heat, then add the chopped onion. Cook, stirring occasionally, until the onion softens, about 3 to 5 minutes.
- Cook Vegetables: Add chopped carrots, zucchini, red bell pepper, minced garlic, and grated ginger to the skillet. Sauté for 2 to 3 minutes until vegetables begin to soften.
- Add Curry Sauce Ingredients: Pour in the full-fat coconut milk, fish sauce (if using), and red curry paste. Stir well to combine, then bring the mixture to a full boil. Cook, stirring occasionally, until the vegetables reach desired tenderness, about 8 minutes.
- Combine Steak with Curry: Add the seared steak back into the skillet and stir to incorporate. Cook just until the steak is heated through. Stir in fresh Thai basil leaves if desired.
- Season and Serve: Taste the curry and adjust seasoning with sea salt and black pepper as needed. Optionally add more curry paste or a drizzle of lime or lemon juice. Serve hot over steamed brown or white rice, cauliflower rice for a low-carb option, or with fried rice for an extra comforting meal.
Notes
- Use a large skillet with deep sides or a wok for best results to accommodate the volume of ingredients.
- Do not overcook the steak strips when searing; they will finish cooking in the curry sauce.
- Fish sauce adds umami but is optional for a less pungent flavor.
- Fresh Thai basil leaves add a fragrant note but can be omitted if unavailable.
- Adjust curry paste quantity to your preferred spice level.
- Serve with rice of choice to balance the creamy, spicy curry.
