Ingredients

Steak

  • 500 g (1 lb) fillet / beef tenderloin
  • 1 tbsp olive oil
  • 2 tsp salt

Dressing

  • 6 sundried tomatoes
  • ¼ cup olive oil
  • ¼ cup soy sauce
  • 1 tbsp lemon juice
  • 2 garlic cloves, crushed
  • 1 tsp finely chopped rosemary
  • Salt and pepper, to taste

To Serve

  • Parmesan cheese, shaved
  • Fresh rocket/arugula

Instructions

  1. Prepare the Steak: Drizzle the beef fillet generously with olive oil and season all over with 2 teaspoons of salt.
  2. Cook the Steak: Heat a pan or grill until very hot. Cook the beef for approximately 3-5 minutes per side, depending on your preferred doneness. The recipe recommends rare to medium rare.
  3. Rest the Steak: Remove the steak from the heat and let it rest for at least 10 minutes. This allows the juices to redistribute for a tender, juicy result.
  4. Make the Dressing: Finely chop the sundried tomatoes and crush the garlic cloves. In a bowl, combine the sundried tomatoes, crushed garlic, ¼ cup olive oil, ¼ cup soy sauce, 1 tablespoon lemon juice, finely chopped rosemary, and salt and pepper to taste. Mix well. You may also pulse this mixture briefly in a food processor for a smoother dressing if desired.
  5. Slice and Assemble: Thinly slice the rested steak across the grain and arrange the slices on a serving plate. Drizzle the prepared dressing evenly over the steak.
