Ingredients
Easy Ginger Cake:
- 450 g (3 + ¾ cups) plain (all-purpose) flour, sifted
- 1 ¼ tsp baking powder
- 1 ¼ tsp bicarbonate of soda (baking soda)
- 4 ½ tsp ground ginger
- 2 tsp mixed spice (pumpkin spice)
- 160 g (¾ cup) caster (superfine) sugar
- ½ tsp salt
- 160 ml (⅔ cup) sunflower oil (or another neutral oil)
- 200 g (7oz) golden syrup
- 200 g (7oz) treacle (molasses)
- 360 ml (1 ½ cups) boiling water
Lemon Glaze:
- 75 g icing (powdered) sugar, sifted
- juice of ½ a lemon
Instructions
- Preheat and prepare the pan: Preheat the oven to 180°C/160°C fan/350°F/gas mark 4. Grease a 23x33cm (9x13 inch) rectangular cake tin and line it with a strip of baking parchment to prevent sticking.
- Mix dry ingredients: In a large bowl, whisk together the sifted plain flour, baking powder, bicarbonate of soda, ground ginger, mixed spice, caster sugar, and salt until well combined.
- Add wet ingredients and combine: Pour in the golden syrup, treacle, sunflower oil, and boiling water into the dry ingredients. Whisk the mixture thoroughly until there are no lumps of flour remaining and the batter is smooth.
- Bake the cake: Pour the batter into the prepared cake tin, smoothing the top with a spatula. Bake in the preheated oven for about 25 to 35 minutes, or until a skewer inserted into the center comes out clean.
- Cool the cake: Remove the cake from the oven and let it cool in the tin for 20 to 30 minutes. Then carefully flip the cake out onto a wire rack and allow it to cool completely before glazing.
- Make the lemon glaze: Place the sifted icing sugar in a bowl. Gradually add the lemon juice while stirring until a smooth drizzling consistency is reached.
- Apply glaze and serve: Drizzle the lemon glaze evenly over the cooled cake. Cut into squares and serve as a delicious vegan dessert or snack.
Notes
- For best results, use gram measurements with a digital scale as cup measurements can be inaccurate for baking.
- For an extra ginger boost, add a couple handfuls of chopped stem or candied ginger to the batter.
- To increase the spiciness, add ½ tsp allspice or ¼ tsp ground anise for a lovely flavor twist.
