  • 1 cup Boiling Water

Tomato Sauce

  • 1 Yellow Onion, chopped
  • 1 Tablespoon Olive Oil
  • 1 1/2 cups Crushed Tomato (canned)
  • 1/2 cup Tomato Sauce (canned)
  • 1/2 teaspoon Black Pepper

Fresh Vegetables and Herbs

  • 1/2 small Red Onion, finely chopped (about 1/4 cup)
  • 1/2 Bell Pepper, finely chopped (about 1/4 cup)
  • Fresh Dill, finely chopped (about 1/4 cup)
  • Fresh Parsley, finely chopped (about 3/4 cup)

Additional Ingredients

  • 1/4 cup + 2 Tablespoons Olive Oil
  • 2 Lemons, juiced

Instructions

  1. Soak Bulgur: Combine the fine bulgur wheat and boiling water in a large mixing bowl. Stir well, then set aside to allow the bulgur to absorb the water and soften.
  2. Sauté Onion: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chopped yellow onion and sauté for 3 to 4 minutes until the onion becomes soft and translucent.
  3. Simmer Tomato Mixture: Add the crushed tomato, tomato sauce, and black pepper to the skillet with the onions. Stir to combine, then let it simmer on medium-low heat for 20 to 25 minutes to develop rich flavors. Remove from heat and allow to cool.
  4. Prepare Vegetables and Herbs: Finely chop the red onion, bell pepper, fresh dill, and fresh parsley. Juice the lemons and set aside.
  5. Drain Bulgur: Check the bulgur for any excess water and drain it carefully if needed.
  6. Combine Salad: In the large mixing bowl with the bulgur, add the cooled tomato and onion mixture, chopped vegetables and herbs, the remaining olive oil (1/4 cup + 2 tablespoons), and lemon juice. Stir everything thoroughly to blend all flavors evenly.

Notes

  • Use fine bulgur for the best texture; medium or coarse bulgur will result in a different consistency.
  • Allow the tomato mixture to cool before combining with bulgur to prevent wilting the fresh herbs.
  • The salad tastes even better if refrigerated for an hour before serving to allow flavors to meld.
