Ingredients

Pie Crust

Instructions

  1. Prepare the Pie Crust: Preheat your oven to 325°F (163°C). Line a rimmed baking sheet with foil and place the frozen pie crust (still in its pan) on top of the sheet. Prick small holes in the bottom and sides of the pie crust with a fork to prevent air bubbles. You can also add pie weights to keep the crust from puffing up. Bake the crust for 10-12 minutes until partially baked, then remove from the oven and keep the oven on.
  2. Make the Filling: While the crust bakes, combine cornstarch and granulated sugar in a medium saucepan, whisking until smooth and well incorporated with no clumps. Add melted butter, eggnog, and nutmeg to the mixture and place the saucepan over medium heat. Cook and stir constantly for 5-7 minutes until the filling thickens and looks creamy and pudding-like. Remove the pan from heat and whisk in the vanilla extract.
  3. Assemble the Pie: Pour the warm custard filling into the partially baked pie crust, smoothing out the top evenly. Drizzle the remaining melted butter over the filling, then sprinkle the combined granulated sugar and cinnamon mixture generously on top.
  4. Bake and Broil the Topping: Place the pie back in the oven and bake for 25 minutes. After baking, switch the oven to broil and broil the pie for about 1 minute, carefully watching it, until the topping is golden brown and bubbly, mimicking the brulee effect. Remove from oven.
