Instructions

  1. Preheat and Prepare Pie Crust: Preheat your oven to 325°F (163°C). Line a rimmed baking sheet with foil and place the frozen pie crust, still in its pan, on top to catch any drips. Prick small holes with a fork on the bottom and sides of the crust to prevent air bubbles. Optionally, fill with pie weights to keep the crust flat during baking. Bake the crust for 10-12 minutes until slightly set. Remove from oven but leave oven on.
  2. Make the Custard Filling: While the crust bakes, whisk cornstarch and granulated sugar together in a medium saucepan until smooth with no clumps. Stir in melted butter, eggnog, and nutmeg. Place the saucepan over medium heat and cook the mixture, stirring constantly, until it thickens to a smooth, pudding-like consistency, about 5-7 minutes. Remove from heat and whisk in vanilla extract thoroughly.
  3. Assemble the Pie: Pour the custard filling into the partially baked pie crust, smoothing the surface evenly. Pour the melted butter topping evenly over the filling. In a small bowl, combine granulated sugar and ground cinnamon, then sprinkle this mixture liberally and evenly over the top of the pie.
