Enoki Beef Rolls are a delightful Japanese-inspired dish featuring tender thinly sliced beef wrapped around delicate enoki mushrooms, cooked in a savory dashi-based sauce with caramelized onions and finished with a silky scrambled egg topping. Perfect as a flavorful and cozy meal served alongside steamed rice.

  • Total Time: 20 minutes
  • Yield: 2 servings

Ingredients

Beef Rolls

  • 12 slices thinly sliced beef
  • 1 pack enoki mushrooms (split into 12 pieces)
  • 1/2 small yellow onion, sliced
  • 2 large eggs

Sauce

  • 1 cup dashi broth
  • 2 tablespoons mirin
  • 3 tablespoons soy sauce
  • 1/2 tablespoon sugar
  • 1/4 teaspoon black pepper

Garnish

  • 1 stalk green onion, diced
  • 1 tablespoon sesame seeds

Other

  • 1 tablespoon olive oil (for cooking onions)

Instructions

  1. Prep the enoki beef rolls: Divide the enoki mushrooms into 12 small bunches. Take one slice of thinly sliced beef and roll it tightly around each bunch of enoki mushrooms, creating individual beef rolls.
  2. Mix the sauce: In a small bowl, combine the dashi broth, mirin, soy sauce, sugar, and black pepper. Stir well until the sugar dissolves and the ingredients are evenly mixed.
  3. Cook the onions: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced onions and cook, stirring occasionally, until they become translucent, slightly browned, and caramelized, about 3 to 5 minutes.
  4. Add the enoki beef rolls and sauce: Place the beef-wrapped enoki mushroom rolls in a single layer on top of the cooked onions. Pour the prepared sauce evenly over the rolls. Cover the skillet with a lid and cook for 3 minutes. Then flip the rolls carefully and cook for another 1 to 2 minutes, allowing the beef to cook through and the flavors to meld.
  5. Add the egg: In a separate bowl, lightly beat the two eggs. Drizzle the beaten eggs over the beef rolls in the skillet. Cover and simmer gently until the eggs are fully cooked and set, about 2 minutes.
  6. Serve: Remove from heat. Garnish with diced green onions and sprinkle with sesame seeds. Serve the enoki beef rolls hot with steamed rice and enjoy this savory, comforting dish.

Notes

  • Use thinly sliced beef for easy rolling and quick cooking.
  • Dashi broth can be made from powder or homemade using kombu and bonito flakes.
  • Be careful not to overcook the eggs; they should remain soft and silky.
  • This dish pairs excellently with steamed white rice or a light salad.
  • Adjust soy sauce and sugar in the sauce to taste depending on preference for saltiness and sweetness.
