Ingredients
Vegetables & Greens
- 113 g spinach leaves (about 1.4 cups packed)
- 6-8 pieces sun dried tomatoes packed in oil, chopped
Bread & Butter
- 4 slices sourdough bread
- 2 tablespoons butter, softened at room temperature
Cheese & Dairy
- ½ cup feta cheese, crumbled
- ¼ cup cheddar cheese, grated (or grated mozzarella cheese)
Other
- 1 tablespoon olive oil
- 1 pinch salt
- 1 pinch oregano
- 1 pinch red pepper flakes
- 1 teaspoon honey (optional for serving)
Instructions
- Sauté the Spinach: Heat 1 tablespoon olive oil in a non-stick pan over medium heat. Add 113 g of spinach leaves and sauté for 5-6 minutes until the spinach wilts. Sprinkle a pinch of salt, stir, and then transfer the cooked spinach to a plate. Wipe the pan clean with a paper towel.
- Prepare the Bread: Spread softened butter evenly on one side of each of the 4 slices of sourdough bread. Place two slices of bread butter-side down in the heated pan.
- Add Toppings: Evenly distribute the chopped sun-dried tomatoes over the two slices of bread in the pan, pressing them gently with a spoon so they stick well. Next, sprinkle half of the crumbled feta cheese and half of the grated cheddar cheese on top, followed by the cooked spinach. Add the remaining feta and cheddar cheese over the spinach.
- Season: Sprinkle a pinch of oregano and red pepper flakes on top of each prepared sandwich layer to add herbal and spicy notes.
- Assemble the Sandwich: Top each prepared sandwich with the remaining two slices of bread, butter side facing up.
- Grill the Sandwiches: Place the pan over medium heat and cook the sandwiches for about 5 minutes until the bottom slices are golden brown. Carefully flip the sandwiches and cook the other side for an additional 5 minutes until toasted and the cheese is melted and gooey.
- Finish and Serve: Sprinkle thyme or additional oregano and red pepper flakes on the sandwiches. Optionally, drizzle a teaspoon of honey on each sandwich before serving immediately for a touch of sweetness.
Notes
- Use a sturdy bread like sourdough or ciabatta to prevent sogginess and hold all ingredients well.
- If using frozen spinach, make sure to thaw and drain thoroughly to avoid excess moisture.
- Cook over medium heat to ensure even toasting and cheese melting without burning.
- Feel free to customize the sandwich by adding sautéed onions, bell peppers, or mushrooms as desired.
