This Fig Pizza features a delightful combination of roasted butternut squash, fresh figs, caramelized onions, and creamy goat cheese on a homemade dough base, finished with fresh arugula and a balsamic vinegar drizzle for a perfect balance of sweet and savory flavors.

  • Total Time: 1 hour 20 minutes
  • Yield: 5 servings

Ingredients

For the Dough:

  • 1 1/4 ounce package active dry yeast
  • 1 cup warm water
  • 1 tablespoon honey
  • 1 teaspoon salt
  • 2 teaspoons olive oil
  • 2 1/2 cups all-purpose flour

For the Toppings:

  • 1 medium butternut squash, sliced
  • 8 fresh figs, halved
  • 1 cup onions, diced
  • 4 oz goat cheese
  • 1 1/2 cups arugula
  • 2/3 cup olive oil
  • 8 cloves garlic

Instructions

  1. Prepare the Dough: Warm a bowl and combine the active dry yeast, honey, and warm water. Add the salt, 2 teaspoons olive oil, and 2 1/2 cups of all-purpose flour. Using a dough hook attachment on a mixer, mix on speed 2 for 1 minute. Gradually add the remaining flour in 1/2 cup increments while mixing at speed 2 until the dough sticks to the hook. Continue mixing for an additional 2 minutes at speed 2. Coat the dough with olive oil, place it in a greased bowl, cover with plastic wrap, and let it rise in a draft-free area for about an hour or until doubled in size.
  2. Preheat Oven and Prepare Garlic Oil: Preheat your oven to 450°F (232°C). Heat olive oil in a pan over medium heat, add the garlic cloves, and cook carefully, stirring constantly to avoid burning. Once fragrant, remove from heat and set aside.
  3. Caramelize Onions: Heat 2 tablespoons of olive oil in a skillet over medium-low heat. Add diced onions and cook for about 30 minutes, stirring frequently until they become soft and caramelized.
  4. Prepare Vegetables and Figs: Slice the butternut squash thinly and halve the fresh figs. Arrange the squash, caramelized onions, and figs on a baking sheet. Drizzle with olive oil to coat evenly. Roast in the preheated oven at 450°F for about 15-20 minutes until the butternut squash is tender.
  5. Shape Dough: After the dough has doubled, punch it down gently with your fist. On a greased baking sheet, stretch the dough carefully to avoid ripping, pressing it out to create a pizza base with a slightly raised collar.
  6. Assemble the Pizza: Brush the prepared garlic oil mixture evenly over the stretched dough. Arrange the roasted butternut squash, figs, caramelized onions, and goat cheese evenly on top of the dough.
  7. Bake the Pizza: Bake the assembled pizza in the oven at 450°F for 15 to 20 minutes until the toppings are golden and the crust is crisp.
  8. Add Finishing Touches: Remove the pizza from the oven, top with fresh arugula, and drizzle with balsamic vinegar for a fresh, peppery crunch and tangy finish.

Notes

  • Preheat your oven thoroughly to ensure a crispy pizza crust.
  • Slice the butternut squash thinly to ensure even and quick roasting.
  • Substitute goat cheese with blue cheese, mozzarella, or your favorite cheese if preferred.
  • Be careful when sautéing garlic to avoid burning, as burnt garlic can become bitter.
  • Add arugula only after baking to maintain its fresh texture and peppery flavor.
  • The balsamic vinegar drizzle is optional but adds a nice tangy contrast to the sweet and savory toppings.
