Ingredients

Dry Ingredients

  • 250 gr (1 2/3 cup) Buckwheat Flour
  • 1 teaspoon Salt (for savory crepes)
  • 1 tablespoon Caster Sugar (for sweet crepes)

Wet Ingredients

  • 2 large Eggs
  • 240 ml (1 cup) Full Cream / Whole Milk
  • 240 ml (1 cup) Sparkling Water (or still water)

Instructions

  1. Mix dry ingredients
    In a large mixing bowl, combine the buckwheat flour with salt if making savory crepes or caster sugar if making sweet crepes. Create a well in the center.
  2. Add wet ingredients and whisk
    Pour in the whisked eggs, milk, and sparkling water into the well. Whisk all ingredients together until you get a thin, smooth, and liquid batter.
  3. Rest the batter
    Let the batter rest for at least 30 minutes, up to 2 hours, to allow the buckwheat flour to fully absorb the liquids, resulting in better texture for crepes.
  4. Preheat pan and grease
    Heat a medium-sized non-stick pan over medium heat. Lightly grease it with melted butter to prevent sticking.
  5. Pour batter and cook crepes
    Pour a small amount of batter into the center of the warm pan, tilting the pan to spread the batter evenly into a thin layer. Cook for about 1 minute on the first side until edges start to curl, then flip and cook the other side for about 1 minute.
  6. Adjust batter consistency if needed
    If the batter is too thick and doesn’t spread well, add a little more milk or water. If it’s too runny, incorporate a bit more buckwheat flour to thicken.
  7. Store crepes
