Ingredients
For the Dough:
- 1 1/2 cups water (360ml), warm (100°F - 110°F)
- 4 cups all-purpose flour (480g), plus extra for kneading
- 2 packages dry yeast (14g)
- 2 tbsp granulated sugar
- 1 pinch kosher salt
- 1 tsp olive oil plus more for the bowl
- 2 tsp crushed dried rosemary
For the Toppings:
- 1/3 cup pizza sauce (80ml)
- 3 cups cherry tomatoes, halved
- 1 1/2 cups fresh mozzarella, sliced into disks
- 1 pinch sea salt
- Fresh basil leaves for garnish
Instructions
- Activate Yeast: In a warm mixing bowl, combine warm water at about 100°F, dry yeast, and granulated sugar. Let it rest for approximately 7 minutes until bubbles appear, indicating the yeast is active.
- Mix Dough Ingredients: Add kosher salt, crushed dried rosemary, and olive oil to the yeast mixture and stir until combined.
- Combine Dough: Attach the dough hook to a stand mixer, add flour gradually, mix on low speed for 1 minute, then increase to medium until the dough collects into a ball.
- First Rise: Lightly coat the dough ball with olive oil and place it in a greased bowl. Cover with plastic wrap or a cloth and set it in a draft-free area to rise for about one hour until doubled in size.
- Preheat Oven: Preheat the oven to 450°F while dough is rising to ensure it's ready for baking.
- Shape Dough: Once risen, punch down the dough, flour a surface and knead for about 5 minutes. Divide into four equal parts and shape each into a stretched circle.
- Prepare Crust: On parchment paper or a pizza stone/baking tray, press each dough ball to form a pizza crust with a slight collar on the edges.
- Add Toppings: Brush each crust with olive oil, spread pizza sauce evenly, layer mozzarella slices and halved cherry tomatoes, then sprinkle with sea salt.
- Bake: Bake pizzas for about 10 minutes or until the crusts turn golden brown and tomatoes soften.
- Garnish and Serve: Remove from oven, sprinkle fresh basil leaves on top just before serving to add fresh flavor and aroma.
Notes
- Use olive oil to lightly coat the bowl during dough rising to prevent sticking.
- Ensure water temperature for activating yeast is between 100°F and 110°F for best results.
- Use parchment paper, a pizza stone, or baking tray based on availability; each will yield good results.
- Allow dough to rest and rise fully to develop a light and airy crust.
- Fresh basil should be added only after baking to retain its flavor and color.
