Delightfully fresh and light, these Fruit Spring Rolls combine tender rice noodles, sweet strawberries, blueberries, and mint, wrapped in delicate rice paper. Served with a zesty lime and honey dipping sauce, they are a perfect healthy snack or appetizer that is both gluten-free and refreshing.

  • Total Time: 20 minutes
  • Yield: 4 spring rolls

Ingredients

For the Filling

  • 4 rice paper wrappers
  • 1 cup thin rice noodles, prepared according to package directions
  • 1 tablespoon honey
  • ⅛ cup fresh mint, chopped
  • 3 large strawberries, sliced
  • ¼ cup blueberries
  • 1½ tablespoons chopped glazed pecans

For the Dipping Sauce

  • 1 lime, juiced
  • 1 tablespoon honey (adjust to taste)
  • 1 tablespoon chopped fresh mint

Instructions

  1. Prepare Noodles: Cook the rice noodles according to the package instructions. Drain well. Mix the cooked noodles with the honey and chopped mint, then set aside to cool slightly.
  2. Soften Rice Paper: Lay a damp kitchen towel on your work surface. Soak one rice paper wrapper in very warm water for 20-30 seconds until it softens and becomes pliable. Place the softened rice paper on the damp towel.
  3. Assemble Filling: Place about ¼ cup of the noodle mixture in the center of the rice paper, forming it into a rectangle shape. Top with sliced strawberries, blueberries, and chopped glazed pecans evenly over the noodles.
  4. Roll the Spring Roll: Fold the bottom edge of the rice paper over the filling, then fold in the sides. Finally, gently roll the rice paper around the filling to form a tight roll. Repeat the process with remaining wrappers and ingredients.
  5. Prepare Dipping Sauce: In a small bowl, whisk together lime juice, honey, and chopped fresh mint until well combined. Adjust sweetness by adding more honey if desired.
  6. Serve: Arrange the fruit spring rolls on a serving plate and serve alongside the dipping sauce for a fresh and flavorful snack or appetizer.

Notes

  • Ensure rice paper wrappers are softened enough to prevent tearing during rolling.
  • Use warm water to soften rice paper for best pliability.
  • Substitute glazed pecans with other nuts like walnuts or almonds if preferred.
  • For vegan option, use agave syrup instead of honey.
  • Serve immediately for best texture; rice paper can become chewy if stored too long.
