Instructions
- Prepare the Matcha Pancake Batter: In a large bowl, whisk together the egg, sugar, and vanilla extract until smooth and homogenous. Then, mix in the milk until fully combined.
- Add Dry Ingredients: Sift the oat flour, matcha powder, baking powder, and salt into the wet mixture. Whisk thoroughly until there are no dry spots remaining. Adjust the batter consistency by adding a splash more milk if too thick, or a bit more flour if too thin.
- Incorporate Bananas: Gently fold the sliced banana coins into the batter, ensuring they are evenly coated.
- Heat the Pan: Warm a large skillet or frying pan over low to medium heat. Lightly grease the pan with cooking spray or butter.
- Cook the Mini Pancake Bites: Place one banana slice in the pan, then spoon batter around it to form a mini pancake. Add two dollops of batter on the sides of the banana slice to represent frog eyes. Cook each side for 2-3 minutes or until the pancakes turn golden brown. Work in batches and transfer cooked pancakes to a cooling rack or keep warm in a low oven.
