Meat and Broth
- 3-4 lbs beef roast
- 1 cup broth
Vegetables and Herbs

- 4 garlic cloves, minced

Gravy Ingredients
- 3 c roast drippings
- 3-4 tbsp flour (can use gluten-free)
- 1 cup cold water
- Salt and pepper to taste
Instructions
- Prepare the Roast: Rub the beef roast thoroughly with kosher salt. Place it inside the Instant Pot or pressure cooker. Add the sliced onions, fresh herbs (thyme and rosemary), minced garlic, and 1 cup of broth around the roast to build layers of flavor.
- Cook the Roast: For a thawed roast weighing 3-5 pounds, set the Instant Pot to cook on high pressure for 60-90 minutes, then allow a natural pressure release. For a frozen roast of the same size, cook on high pressure for 90-120 minutes, again allowing a natural pressure release to ensure tenderness.
- Prepare the Gravy: After cooking, strain and collect the roast drippings (about 3 cups). Using the Instant Pot’s sauté setting or in a separate saucepan on the stove, bring the drippings to a boil. Dissolve 3 tablespoons of flour into 1 cup of cold water thoroughly. Slowly whisk this slurry into the boiling drippings, stirring constantly to prevent lumps. Continue boiling and whisking until the gravy thickens to your preferred consistency. If you desire thicker gravy, mix and add an additional tablespoon of flour dissolved in water. Season the gravy with salt and pepper to taste and keep it on a low simmer, stirring occasionally until ready to serve.
- Serve: Serve the tender roast alongside cooked potatoes (not included in recipe) and generously ladle the rich homemade gravy over the meal for a hearty and comforting dinner.

- You can substitute gluten-free flour to make the gravy gluten-free.
