Ingredients
Wet Ingredients
- 6 tbsp (85 g) unsalted butter
- 1 tsp (5 ml) vanilla extract
Marshmallows
- 6 cups (10 oz, 283 g) mini marshmallows, divided (reserve 1 cup mini marshmallows)
Cereal
- 5 cups (6 oz, 180 g) Fruity Pebbles cereal
Other
- ½ tsp salt
Instructions
- Prepare Pan: Lightly grease and line an 8x8-inch pan with parchment paper along the bottom and two sides to ensure easy removal of the treats later.
- Melt Butter and Brown It: In a large saucepan or pot over low heat, melt the butter. To brown the butter, allow it to start foaming and whisk or stir frequently. The butter will develop a nutty fragrance, and once the foam subsides, you will see browned bits at the bottom, signaling it is ready.
- Add Mini Marshmallows: Add almost all the mini marshmallows (reserve 1 cup for later) to the browned butter. Stir continuously over low heat until the marshmallows are mostly melted and combined into a smooth, gooey mixture.
- Mix Vanilla and Salt: Remove the pot from the heat and stir in the vanilla extract and salt for enhanced flavor depth.
- Combine Cereal: Pour all 5 cups of Fruity Pebbles cereal into the melted marshmallow mixture. Quickly and carefully stir to coat all the cereal evenly with the gooey marshmallow mixture.
- Add Reserved Marshmallows: Gently fold in the reserved 1 cup of mini marshmallows to add extra texture and gooey bursts within the treats.
- Press Into Pan: Evenly scoop and spread the sticky mixture into the prepared pan. Gently press the treat mixture into place to form an even layer without compacting it too hard.
- Set and Serve: Allow the bars to set at room temperature for at least 30 minutes until firm. Once set, slice into squares and enjoy your Fruity Pebbles Treats!
Notes
- For the best texture, avoid pressing the mixture too firmly into the pan.
- Brown butter adds a nutty flavor but can be skipped if preferred, just melt the butter until fully liquid without browning.
- Store treats in an airtight container at room temperature for up to 3 days to maintain freshness.
- Add-ins like chocolate chips or sprinkles can be stirred in along with the cereal for variation.
- Use parchment paper with overhang on two sides to easily lift the treats out of the pan.
