Ingredients
Dry Ingredients
- 1 ⅔ cup coconut sugar (we like Supernatural or Whole Foods 365 Brand)
- 1 cup MB 1:1 gluten-free flour blend
- 3/4 cup almond flour (we like Wellbee’s)
- 1/2 cup cocoa powder
- 3 Tbsp flaxseed meal
- 1/2 tsp sea salt
- 3/4 cup chocolate chips (semi-sweet, ensure dairy-free/vegan as needed)
Wet Ingredients
- 2/3 cup boiling water
- 1/4 cup vegan butter, melted
- 1 tsp vanilla extract
Instructions
- Preheat and prepare pan: Preheat your oven to 350 degrees F (176 C) and line an 8x8-inch metal baking pan with parchment paper. Set this aside to be ready for the batter.
- Mix dry ingredients: In a large mixing bowl, whisk together the coconut sugar, gluten-free flour blend, almond flour, cocoa powder, flaxseed meal, and sea salt until almost fully combined. Then stir in the chocolate chips to distribute them evenly throughout the dry mix.
- Combine wet and dry ingredients: Pour the boiling water, melted vegan butter, and vanilla extract into the bowl with the dry ingredients. Use a spatula to stir vigorously for 30 seconds to 1 minute until the batter is fully combined and mostly smooth. The chocolate chips will start to melt into the mixture. If you prefer extra intact chocolate chips, allow the batter to cool slightly and fold them in at this stage.
- Transfer and bake: Pour the batter into the prepared baking pan and spread it evenly. Bake in the preheated oven for 35 to 40 minutes until the edges are set and the center has a barely shiny, fudgy appearance.
- Cool and serve: Let the brownies cool in the pan for at least 30 minutes before slicing to allow them to set properly. For brownies with crisp edges, refrigerate for 2 hours before cutting. Store leftovers lightly covered at room temperature for 2-3 days or freeze for up to 1 month.
Notes
- Use a metal baking pan for best heat conduction and even baking.
- Ensure your chocolate chips are vegan and dairy-free if adhering to the recipe's vegan nature.
- Let the batter cool before folding in additional chocolate chips to keep some whole.
- Cooling is crucial for clean slicing since the brownies are very gooey when warm.
- Refrigeration firms the edges for a crispier texture.
- Store at room temperature covered for short term, or freeze for longer storage.
