Ingredients
Beans
- 1 can Red or brown fava beans – 14 fl oz (398ml)
- 1 can Chickpeas – 14 fl oz (398ml)
- ½ teaspoon Ground cumin – Use more or less to taste
- Kosher salt and black pepper to taste
Dressing
- 1 Medium tomato – finely diced
- ¼ cup Fresh parsley – chopped
- 1-2 Hot peppers – minced (Optional)
- 1 Garlic clove – minced (Optional, use as much garlic as you like)
- 2 tablespoons Extra virgin olive oil
- 2 tablespoons Lemon juice
- More olive oil and lemon juice to garnish
Instructions
- Boil: In a small pot over medium heat, empty both cans of red fava beans and chickpeas along with their liquids. Bring the mixture to a boil, then reduce heat and simmer gently for 5 to 8 minutes until the beans are fork tender. Season with ground cumin, kosher salt, and black pepper according to taste.
- Mash: Using the back of a fork or a potato masher, mash about half of the beans to achieve a chunky texture. Add a small amount of water if needed to maintain a slightly runny consistency.
- Make Dressing: In a small bowl, combine the finely diced tomato, chopped parsley, extra virgin olive oil, lemon juice, and if desired, minced hot peppers and garlic. Season with a pinch of salt and mix well.
- Mix In: Stir half of the dressing into the mashed bean mixture and heat through gently. Taste and adjust the seasoning if necessary.
- Dress: Transfer the bean mixture to a serving bowl. Top with the remaining dressing and drizzle generously with olive oil and a squeeze of fresh lemon juice. Serve warm alongside pita bread and fresh vegetables for a complete meal.
Notes
- Using canned beans saves time, but if using dried beans, soak and cook them until tender beforehand.
- Adjust cumin quantity to your personal preference for spice and warmth.
- To add extra flavor, try adding minced garlic to the dressing or directly to the beans while cooking.
- The dressing can be customized with additional herbs like cilantro or mint according to taste.
- Serve with warm pita bread and fresh vegetables such as cucumbers and radishes for an authentic experience.
