Ingredients
Potato Mixture
- 30 oz frozen hashbrowns, diced or shredded, thawed
- 16 oz sour cream
- 10.5 oz condensed cream of chicken soup
- 1/4 cup butter, melted
- 1 oz Onion Dip Mix
- 1 tsp salt, or to taste
- 1 1/2 cups shredded cheddar cheese
Topping
- 1/4 cup butter, melted
- 1/2 cup corn flake cereal
- 1/2 cup shredded cheddar cheese
Instructions
- Thaw Potatoes: Place the frozen hashbrowns in the fridge overnight to thaw completely. This ensures even cooking and proper texture in the casserole.
- Preheat Oven: Set your oven to 350°F (175°C) so it’s hot and ready for baking the casserole later.
- Mix Wet Ingredients: In a large bowl, combine the sour cream, cream of chicken soup, 1/4 cup melted butter, onion dip mix, and salt. Stir thoroughly until well blended.
- Add Potatoes and Cheese: Incorporate the thawed hashbrowns and 1 1/2 cups of shredded cheddar cheese into the bowl. Mix everything together until the potatoes are evenly coated.
- Transfer to Baking Dish: Pour the potato mixture into a greased 9x13-inch baking dish, spreading it out evenly for uniform cooking.
- Add Cheese Layer: Sprinkle the remaining 1/2 cup of shredded cheddar cheese over the top of the potato mixture for a cheesy crust.
- Prepare Cornflake Topping: Crush the corn flakes by placing them in a ziplock bag and using your hands or a rolling pin to break them into coarse crumbs. Then, mix the crushed cereal with the remaining 1/4 cup melted butter in a small bowl.
- Top Casserole: Evenly sprinkle the buttery cornflake mixture over the cheese layer on the casserole.
- Bake: Place the casserole in the preheated oven and bake for 40-50 minutes, or until the topping is golden brown and the casserole is hot and bubbly throughout.
- Serve: Remove from oven and let it cool slightly before serving. Enjoy your rich, crunchy funeral potatoes!
Notes
- Thawing the hashbrowns overnight in the fridge prevents excess water from making the casserole soggy.
- You can substitute the cream of chicken soup with cream of mushroom for a vegetarian-friendly version.
- To make it gluten-free, ensure the onion dip mix and corn flakes are gluten-free certified.
- Feel free to add cooked bacon or green onions for extra flavor and texture.
- Leftovers can be refrigerated and reheated in the oven for best results.
