  • Total Time: 56 minutes
  • Yield: 5 servings

Ingredients

Homemade Croutons

  • 2 cups French Bread, cut into 1″ cubes
  • 3 tablespoons Butter, melted
  • 1 tablespoon Minced Garlic
  • 1 teaspoon Basil
  • ½ teaspoon Salt

Garlic Bread Soup

  • 1 Medium-Sized Yellow Onion, diced
  • 2 Bay Leaves
  • 1 teaspoon Thyme
  • 2 teaspoons Olive Oil
  • 2 tablespoons Minced Garlic
  • 1 teaspoon Salt
  • Dash of Black Pepper
  • 8 cups Chicken Broth or Stock, reduced-sodium
  • 12 ounces Day Old French Bread, cubed
  • ½ cup Heavy Whipping Cream
  • ½ cup Grated Parmesan Cheese

Instructions

  1. Prepare Homemade Croutons: Preheat your oven to 350°F (175°C). Cut the French bread into 1-inch cubes. Melt the butter and minced garlic together in a small dish. Drizzle the bread cubes with the garlic butter mixture, then sprinkle with basil and salt. Toss to coat evenly. Arrange the cubes in a single layer on a baking pan and bake for 15 minutes, stirring halfway through. Remove from oven and set aside.
  2. Sauté Aromatics: Heat olive oil in a large pot over medium-high heat. Add diced onions, thyme, bay leaves, salt, and black pepper. Cook for 7-8 minutes until onions start to brown. Add minced garlic and sauté for 30-60 seconds until fragrant.
  3. Simmer Soup Base: Pour in the chicken broth and bring the mixture to a boil. Reduce the heat to a simmer and cook for 15 minutes, allowing the flavors to meld. Remove and discard the bay leaves.
  4. Add Bread and Cream: Whisk the cubed day-old French bread and heavy whipping cream into the broth. Let the bread absorb the liquid and soften for about 5 minutes at a gentle simmer.
  5. Blend Soup: Using a 9-speed immersion blender, purée the soup until smooth, blending the softened onions and bread cubes evenly into the broth.
  6. Finish Soup: Whisk in the grated Parmesan cheese until melted and incorporated. Adjust seasoning if needed.
  7. Serve: Ladle the creamy garlic bread soup into bowls and top with the homemade garlic croutons. Enjoy warm.

Notes

  • An immersion blender or food processor is essential to achieve the smooth, creamy texture of the soup.
  • You can substitute chicken broth with vegetable broth for a vegetarian option, adjusting the diet classification accordingly.
  • For a richer flavor, use day-old bread which soaks up the broth better.
  • If you prefer less sodium, use low-sodium broth and adjust salt to taste.
