Ingredients
Chicken
- 5 chicken thighs, skin on and bone in
- Salt and black pepper, to taste
Sauce
- 1 tablespoon olive oil
- 1/4 cup butter
- 5 cloves garlic, crushed
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven: Preheat your oven to 400°F (204°C) and move the oven rack to the center position.
- Prepare the chicken: Pat the chicken thighs dry with paper towels to ensure crispy skin and season them generously all over with salt and black pepper.
- Sear the chicken: Heat olive oil in a 10-inch cast iron skillet over medium heat. Place the chicken thighs skin-side down and sear until the skin is golden and crispy, about 5 minutes. Flip the chicken thighs over to the other side once the skin is crispy. If the skillet accumulates a lot of fat from the chicken, carefully remove and discard it with a spoon.
- Add garlic butter: Add butter to the same skillet. Once melted, add the crushed garlic and stir around the pan for about 30 seconds to infuse the butter with garlic flavor.
- Bake the chicken: Transfer the entire skillet to the preheated oven and bake the chicken thighs for 30 minutes or until they reach an internal temperature of 165°F (74°C).
- Finish and serve: When cooked, spoon some of the garlic butter sauce over each chicken thigh. Garnish with chopped fresh parsley before serving.
Notes
- If you don’t have an oven-safe skillet, transfer the seared chicken thighs to a baking dish or baking sheet before placing in the oven.
- Allow the chicken thighs to rest for a few minutes after baking to let the juices redistribute for moist and tender meat.
