Ingredients
Steak and Marinade
- 2 ½ pounds skirt, flank, or flat iron steak, cut against the grain into ¼-inch-thick strips
- 1 ½ teaspoons kosher salt
- ½ teaspoon freshly cracked black pepper
- ¼ cup soy sauce, tamari, or coconut aminos
- 2 tablespoons cornstarch
For Cooking
- 1 tablespoon vegetable oil
- ¼ cup beef or chicken stock
- 4 tablespoons unsalted butter
- 4 garlic cloves, minced
Vegetables and Garnish
- 2 cups snow peas
- Green onions, thinly sliced (optional)
- Fresh parsley, finely chopped (optional)
- Cooked rice, for serving (optional)
Instructions
- Season the steak: Sprinkle kosher salt and freshly cracked black pepper evenly all over the strips of steak.
- Marinate the steak: In a medium bowl, mix together soy sauce and cornstarch. Add the steak strips and toss well so each piece is evenly coated with the marinade. Set aside.
- Heat the oil: Place a large cast-iron skillet or wok over high heat and add the vegetable oil. Heat until the oil just starts to smoke, signaling it's hot enough for searing.
- Cook the steak: In batches to avoid overcrowding, add steak strips in a single layer. Cook undisturbed for 2-3 minutes per side until the steak is slightly crispy and browned. Remove cooked steak to a plate and repeat with remaining steak.
- Sauté garlic and snow peas: Reduce heat to medium and add the beef or chicken stock, unsalted butter, and minced garlic to the skillet. Simmer gently until garlic is fragrant, about 2-3 minutes. Add snow peas and cook, stirring occasionally, until beginning to soften, about 2 minutes.
- Combine and finish: Return the seared steak along with any juices collected on the plate back to the pan. Add green onions and parsley if using. Toss everything together to combine and heat through.
- Serve: Serve the garlic butter steak stir-fry warm over cooked rice if desired, garnished with additional herbs or green onions.
Notes
- For very thinly sliced steak strips, freeze the meat for 1 to 2 hours before slicing and use a sharp knife.
- You can substitute snow peas with snap peas or sugar snap peas if preferred.
- Using tamari or coconut aminos makes the dish gluten-free.
- Adjust the garlic quantity to your taste preference for a milder or stronger garlic flavor.
- If you want a richer sauce, increase butter by 1-2 tablespoons.
