Ingredients

For the Chicken

  • 2 pounds (907 g) boneless chicken (preferably thighs)
  • 2 Tablespoons (30 ml) grape seed oil or vegetable oil
  • 4 cloves garlic, minced
  • 2 teaspoons (10 ml) sesame oil
  • 1 Tablespoon (15 ml) fish sauce or soy sauce (use Tamari for gluten free)

For the Vegetables and Herbs

  • 1 bunch fresh basil, mint, or other herbs
  • 1 head fresh lettuce, chopped or torn in small pieces
  • Carrots, celery, cucumbers, daikon radish or bell peppers (optional)
  • 12 rice paper wrappers

For the Garlic Soy Dip

  • 3 Tablespoons (60 ml) soy sauce (use Tamari for gluten free)
  • 1 clove garlic, minced
  • 1 Tablespoon (15 ml) lime juice
  • 1/4 teaspoon sugar
  • 1/4 teaspoon sesame oil

Instructions

  1. Marinate the Chicken: In a large bowl, combine the chicken with vegetable oil, sesame oil, minced garlic, and fish sauce or soy sauce. Mix well to coat all pieces evenly. Cover and let marinate for about 20 minutes to infuse the flavors.
  2. Cook the Chicken: Heat a frying pan over medium-high heat. Add the marinated chicken and cook until it is fully cooked through and has formed a nice crust. Remove from heat and slice the chicken thinly, about 1/4 inch slices, for easy rolling.
  3. Prepare the Vegetables and Herbs: Gather lettuce, fresh herbs, and any additional vegetables you like such as raw carrots, celery, cucumbers, or pickled carrots and daikon radish. Have your rice paper wrappers and a bowl of warm water ready for rolling.
  4. Make the Garlic Soy Dip: In a small bowl, mix together soy sauce, minced garlic, lime juice, sugar, and sesame oil until well combined. Set aside.
  5. Soften the Rice Paper: Fill a large bowl with warm water. Gently dip one rice paper wrapper into the water for a few seconds until it softens but is still slightly firm. Be careful not to over soak as it will become too fragile to roll.
  6. Assemble the Spring Rolls: Place the softened rice paper on a clean plate or surface. On the third of the wrapper closest to you, layer lettuce, herbs, sliced chicken, and your choice of vegetables. Fold the edges in and roll tightly away from you to enclose the fillings securely.
  7. Serve: Serve the garlic chicken spring rolls immediately with the garlic soy dipping sauce. Alternatively, cover them with plastic wrap and refrigerate to enjoy within a few hours.

  • Fresh basil, mint, or other herbs add a wonderful aromatic touch to the rolls.
  • For extra crunch, include raw vegetables like carrots, celery, bell peppers, or cucumbers.
  • Pickled Vietnamese carrots and daikon radish add tangy flavor and are a great addition if available.
