- 2 medium zucchinis, chopped

Instructions
- Prepare the skillet: Place the clarified butter (or ghee) and olive oil in a large skillet and melt over medium-high heat, ensuring the fats are hot enough to cook the shrimp evenly.
- Cook the shrimp: Add the shrimp to the skillet and season with salt, pepper, and Italian seasoning. Cook for about 3 minutes, stirring occasionally, until the shrimp turn pink and are just cooked through.
- Add garlic: Stir in the minced garlic and cook for an additional minute to infuse the shrimp with a rich garlic flavor. Then set the shrimp aside on a plate.
- Sauté the vegetables: If needed, add a little more olive oil to the skillet. Add the diced bell peppers, chopped red onion, and chopped zucchinis. Season with salt and pepper to taste. Sauté the vegetables for 3 to 5 minutes until tender but still slightly crisp. For softer veggies, cook an additional 2 minutes.
- Combine shrimp and veggies: Return the cooked shrimp to the skillet with the sautéed vegetables. Stir to combine all ingredients thoroughly and allow flavors to meld for a minute or two on the heat.
- Meal prep and store: Divide the shrimp and vegetable mixture evenly into 4 glass containers. Cover with lids and store in the refrigerator for up to 4 days.
- Reheat and serve: When ready to eat, microwave the meal prep bowls for about 2 minutes until heated through. Garnish with fresh parsley before serving.
