Delicious and easy garlic mushroom cheese toasts featuring crispy buttered bread topped with savory garlic mushrooms and melted mozzarella cheese, baked to perfection. This quick vegetarian breakfast or snack pairs perfectly with your morning coffee.

  • Total Time: 30 minutes
  • Yield: 4 toasts

Ingredients

Mushroom Mixture

  • 400 grams mushrooms (regular white button mushrooms), sliced
  • 2 tbsp olive oil
  • 1 tsp garlic, minced
  • Salt, to taste
  • Pepper, to taste
  • 1 tbsp oregano
  • 1/2 cup mozzarella cheese, shredded (divided)

Bread Toast

  • 4 bread slices
  • 4 tbsp butter (regular salted)

Instructions

  1. Preheat Oven: Preheat your oven to 200°C (392°F) to prepare it for toasting the bread and later melting the cheese.
  2. Cook Mushrooms: Heat 2 tablespoons of olive oil in a pan over medium-low heat. Add the sliced mushrooms and cook slowly until they start to brown and all moisture evaporates, stirring occasionally.
  3. Toast Bread: While mushrooms cook, spread butter evenly on both sides of each bread slice. Place the buttered bread slices on a baking tray and toast in the preheated oven for 4-5 minutes until they turn light golden brown, then remove and set aside.
  4. Add Garlic to Mushrooms: Once mushrooms are browned, add minced garlic to the pan and cook for an additional minute to infuse flavor.
  5. Combine Mushroom Mixture: Transfer the garlic mushrooms to a bowl. Season with salt, pepper, and oregano. Add 1/4 cup of shredded mozzarella cheese and mix well to combine.
  6. Assemble Toasts: Spread the mushroom mixture evenly over the toasted bread slices. Sprinkle the remaining 1/4 cup of mozzarella cheese on top of each slice.
  7. Bake to Melt Cheese: Place the assembled toasts back into the oven and bake for 8-10 minutes until the cheese is melted and bubbly.
  8. Serve: Remove from oven and serve hot as a savory vegetarian snack or breakfast treat.

Notes

  • Use fresh mushrooms for the best texture and flavor.
  • You can substitute mozzarella with other mild melting cheeses like Monterey Jack or provolone.
  • Ensure mushrooms are cooked on medium-low heat to avoid burning and to allow proper moisture evaporation.
  • Butter both sides of the bread for extra crispiness and flavor.
  • Serve immediately for the best taste as cheese can harden upon cooling.
