  • 1/2 teaspoon Diamond Crystal kosher salt (or 1/4 teaspoon sea salt)
  • 1/3 cup (50g) coconut sugar or granular jaggery
  • 2 tablespoons (16g) ground flax seeds

Wet Ingredients

  • 2 large egg whites
  • 1/4 cup (60ml) maple syrup
  • 1/4 cup (60ml) oil (neutral oil like sunflower, safflower, or coconut oil)
  • 1 1/2 teaspoons pure vanilla extract

Instructions

  1. Preheat Oven: Preheat your oven to 275ºF (135ºC) and position an oven rack in the center. Line a half sheet baking pan with parchment paper and set it aside.
  2. Combine Dry Ingredients: In a medium bowl, mix together the rolled oats, nuts and seeds, coconut flakes, millet, crystallized ginger, ground ginger, cinnamon, and salt until well combined.
  3. Whisk Wet Ingredients: In a large bowl, whisk the egg whites, maple syrup, oil, coconut sugar (or jaggery), vanilla extract, and ground flax seeds until thoroughly combined.
  4. Mix Wet and Dry: Add the dry oat and nut mixture to the wet ingredients. Stir with a silicone spatula or spoon until all the dry ingredients are fully coated with the syrupy wet mixture.
  5. Spread on Pan: Pour the granola mixture onto the prepared baking sheet and spread it out quickly and evenly using your spatula to cover the entire surface in a thin layer without gaps.
  6. Bake: Bake the granola for 55 to 60 minutes, rotating the pan halfway through at the 30-minute mark to ensure even baking and browning.
