- 1 cup mashed ripe bananas (about 3 large bananas)

Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and grease a 9x5 inch bread pan to ensure the banana bread doesn’t stick during baking.
- Mix Dry Ingredients: In a small bowl, combine the gluten-free flour, baking soda, salt, and cinnamon. Stir until evenly mixed and set aside for later.
- Combine Wet Ingredients: In a separate medium-sized bowl, add the unsweetened applesauce, granulated sugar, and melted dairy-free butter. Make sure the butter is cooled to avoid cooking the eggs later.
- Mash Bananas: Thoroughly mash the ripe bananas until smooth with no large lumps remaining. Measure exactly 1 cup of mashed banana to add to your wet mixture for best texture.
- Add Bananas to Wet Mixture: Stir the mashed bananas into the sugar and butter mixture until combined.
- Mix Wet Ingredients: Using an electric handheld mixer on medium speed, blend the wet ingredients until thoroughly incorporated.
- Add Eggs: Crack in the two large eggs and continue mixing with the electric mixer until well combined.
- Combine with Dry Ingredients: Add the flour mixture to the banana mixture.
- Mix Batter: Use a large mixing spoon to fold the flour into the wet ingredients until just combined. Avoid over mixing to keep the bread tender.
- Prepare to Bake: Pour the banana bread batter into the greased 9x5 inch bread pan, spreading it evenly.
