This Gluten Free Lemon Bars recipe offers a tangy, sweet treat made with a gum-free gluten free flour blend and fresh lemon juice. The buttery crust paired with a smooth, zesty lemon filling baked to perfection creates a delicious dessert that is perfect for any occasion. These bars are light, refreshing, and dusted with confectioners’ sugar for an added touch of sweetness.

  • Total Time: 1 hour 0 minutes
  • Yield: 9 bars

Ingredients

Crust Ingredients:

  • 1 cup gum-free gluten free flour blend (See Recipe Notes)
  • 1/2 cup confectioners’ sugar (plus more for dusting)
  • 1/2 teaspoon kosher salt
  • 1 tablespoon finely grated lemon zest (from 1 large lemon)
  • 9 tablespoons unsalted butter (melted and cooled)

Filling Ingredients:

  • 2/3 cup gum-free gluten free flour blend (See Recipe Notes)
  • 1 cup granulated sugar
  • 3/4 teaspoon baking powder
  • 2/3 cup freshly squeezed lemon juice (juice of 4 to 5 medium lemons, strained of seeds and pulp)
  • 4 eggs (at room temperature)

Instructions

  1. Preheat and prepare baking pan: Preheat your oven to 325°F. Grease an 8-inch square baking pan, line it with criss-crossed pieces of parchment paper that overhang the sides, and grease the parchment paper. Set aside.
  2. Make the crust: In a medium bowl, whisk together 1 cup of the gluten free flour blend, confectioners’ sugar, kosher salt, and lemon zest until well combined and clumps of zest are broken up.
  3. Add melted butter: Mix in the melted and cooled butter using a fork until the mixture is well combined but remains clumpy.
  4. Press crust into pan: Scatter the clumpy mixture evenly across the bottom of the prepared pan, then use a small offset spatula or knife to press it into a smooth, even layer.
  5. Bake crust: Place the pan in the center of the preheated oven and bake for about 15 minutes, until the crust changes from shiny to a matte pale color, indicating it is done. Remove and cool briefly.
  6. Make the filling: In a large mixing bowl, whisk together the remaining 2/3 cup gluten free flour blend, granulated sugar, and baking powder until combined.
  7. Add wet ingredients: Stir in the freshly squeezed lemon juice and eggs, whisking until the mixture is smooth and thin with no dry patches and fully combined eggs.
  8. Pour filling over crust: Pour the prepared filling over the baked crust in the pan.
  9. Bake lemon bars: Return the pan to the oven and bake for 25 to 30 minutes until the filling is just set. It should only jiggle slightly in the center and may have pulled away from the edges.
  10. Cool bars: Remove the pan from the oven and place on a wire rack. Let the bars cool in the pan for about 20 minutes.
  11. Chill bars: Cover the pan with plastic wrap and chill in the refrigerator for at least 2 hours until firm.
  12. Slice and serve: Remove bars using the parchment paper overhang, peel away the paper from the sides, and cut into 9 equal squares with a sharp knife. Dust with confectioners’ sugar and serve chilled.

Notes

  • Use a gum-free gluten free flour blend to avoid gummy texture. A blend of rice flour, potato starch, and tapioca starch works well.
  • Ensure eggs are at room temperature before mixing to help create a smooth batter.
  • Do not overbake the lemon bars; the filling should be set but still slightly jiggly in the center before cooling.
  • Line the pan with parchment paper to make removing the bars easier and to prevent sticking.
  • Chilling the bars before slicing helps them firm up for cleaner cuts.
