These Gluten-Free Pigs in a Blanket are a delicious and easy appetizer featuring little smokies wrapped in flaky gluten-free puff pastry, sprinkled with flavorful everything bagel seasoning. Perfect for parties or a snack, they bake to golden perfection and are sure to please everyone, including those avoiding gluten.

  • Total Time: 40 minutes
  • Yield: 36 pieces

Ingredients

Gluten-Free Pigs in a Blanket

  • 1 sheet gluten-free puff pastry, homemade or store-bought
  • 14 oz little smokies (1 package), dried and gluten-free
  • 1 egg
  • 1 tbsp water
  • 2 tbsp everything bagel seasoning

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (177°C) and line a large cookie sheet with parchment paper to prevent sticking and help with even baking.
  2. Prepare the Egg Wash: In a small bowl, whisk together 1 egg and 1 tablespoon of water until the mixture is smooth and well blended; this will help seal the pastry and give a golden finish when baked.
  3. Cut the Puff Pastry: Roll out the gluten-free puff pastry sheet to a 9×12 inch rectangle. Cut the pastry into 36 pieces by slicing 4 even sections along the long side and 9 sections along the short side, approximately 1 inch each. Precision isn’t critical.
  4. Wrap the Smokies: Take one piece of pastry and roll it around a little smokie, pinching the pastry edges to seal completely. Place each wrapped smokie seam side down on the prepared baking sheet. To aid sealing, you can brush a small amount of water or leftover egg wash at the edge before pinching.
  5. Brush and Season: Brush the tops of all wrapped smokies generously with the egg wash, then sprinkle 2 tablespoons of everything bagel seasoning evenly over them for a flavorful crust.
  6. Bake: Bake in the preheated oven for 20-25 minutes, or until the pastry turns golden brown and puffed. Remove from the oven and let them cool slightly before serving warm for best taste and texture.

Notes

  • Ensure puff pastry is completely thawed but cold before rolling to prevent tearing.
  • Use gluten-free everything bagel seasoning to maintain the recipe’s gluten-free status.
  • These can be made ahead of time and baked just before serving for convenience.
  • Serve with mustard or your favorite dipping sauce for extra flavor.
  • For smaller appetizers, cut puff pastry into smaller pieces and adjust baking time accordingly.
