Ingredients
Chicken and Vegetables
- 1 tbsp olive oil (extra virgin)
- 1 pound chicken breast (raw, cut into 1 inch cubes)
- 2 tbsp corn starch (for coating the chicken)
- 2 medium bell peppers (any color, sliced into 1 inch squares)
- 1 cup pineapple cubes
Sweet & Sour Sauce
- 2 tbsp honey
- 1 tbsp gluten free soy sauce (commonly sold as "tamari")
- 3 tbsp ketchup
- 1/2 cup pineapple juice
- 1 tsp minced garlic
- 1/2 tsp dried ginger
- 1/4 cup apple cider vinegar
- 2 tsp corn starch
Instructions
- Heat Olive Oil: Add the olive oil to a large saucepan and set to medium heat to prepare for cooking the chicken.
- Prepare Chicken: Cut the chicken into 1 inch cubes. Place the chicken in a large bowl and mix with 2 tablespoons of corn starch, stirring until each piece is completely coated.
- Cook Chicken: Add the coated chicken cubes to the preheated frying pan and cook until done, about 10 minutes. Stir frequently to ensure even cooking. If the chicken isn't cooking through in the middle, cover with a lid for the last 4-5 minutes to help it cook thoroughly.
- Prepare Bell Peppers: While the chicken cooks, remove the tops and seeds of the bell peppers. Slice them into roughly 1 inch square pieces.
- Remove Chicken: Once cooked, remove the chicken from the frying pan and set aside.
- Cook Peppers: Add the sliced bell peppers to the frying pan and cook over medium heat, stirring frequently until heated through. Remove peppers from the pan and set aside.
- Mix Sweet & Sour Sauce: In a large mixing bowl, combine honey, gluten free soy sauce, ketchup, pineapple juice, minced garlic, dried ginger, apple cider vinegar, and 2 teaspoons of corn starch. Whisk well until the mixture is smooth with no lumps.
- Combine Chicken and Sauce: Return the cooked chicken to the frying pan set over medium heat and pour the prepared sweet and sour sauce over it.
- Thicken Sauce: Stir frequently as the sauce begins to bubble and thicken, coating the chicken evenly.
- Add Peppers and Pineapple: Once the sauce is thickening, add the cooked bell peppers and pineapple cubes back to the pan.
- Finish Cooking: Continue heating and stirring the mixture for about 2 more minutes until the sauce is thick and glossy.
- Serve: Remove from heat and serve warm for a satisfying gluten free sweet and sour chicken meal.

- Using corn starch to coat the chicken creates a nice crispy texture when cooked.
- Covering the pan while cooking the chicken helps it cook through evenly without drying out.
- Feel free to use any bell pepper colors for a colorful dish.
